I had a giant pork roast thawing in my fridge but knew I didn’t want carnitas or “regular ol’ roast”.
I craved something a little bit Asian, with some sesame, and a bright pop of ginger flavor. Maybe even a touch sweet.
True to form, I created this delicious Instant Pot Sesame Ginger Pulled Pork on the fly. (The Instant Pot is amazing like that!)
We brought the TV up from the basement, sprawled out in the living room, and had Family Movie Night with this yummy Asian-inspired Instant Pot meal with a big side of stir-fry veggies.
Sometimes, I plan out the recipes I’m going to post for you… But usually, the best ones are born when I don’t have a plan but have the space and time to use my creativity.

Accidental Meal Prep
The aforementioned roast thawing in my fridge weighed in at a whopping 6.5 pounds! I recognize that your roasts likely will not be so large, and the recipe reflects that.
However, should you find yourself with a little more roast than you know what to do with… well, give thanks and make this Instant Pot Sesame Ginger Pulled Pork anyway!
A large pork roast = leftovers! Which means you have some meal prep options:
- Freeze the leftovers in individual portions to take for work.
- Freeze the leftovers in one large portion for a family dinner later on.
- Portion the leftovers with rice or veggies or cauli-rice in glass containers to re-heat for lunches.
If you have a smaller pork roast, simply make the recipe and enjoy it — leftovers or not.

Ingredients & Swaps
This Instant Pot Sesame Ginger Pulled Pork has some classic Asian ingredients, some of which aren’t easily swapped without sacrificing flavor.
The must-have ingredients are:
- pork roast (obvs — here’s how to find pastured, local pork)
- fresh ginger
- sriracha sauce — look for one that’s free of preservatives
- garlic
- limes — preferably organic since you are using the peel
- toasted sesame seed oil
- some type of sweetener
And here are some swaps:
Instead of coconut aminos (which are paleo), you can use a quality fermented soy sauce. (I buy both from Thrive Market for the best price!)
Use an equal amount of water if you don’t have any bone broth on hand.
Swap yellow or white onion for the red onion.
Use apple cider vinegar instead of rice vinegar in a pinch — though rice vinegar is definitely preferred.

Instant Pot Sesame Ginger Pulled Pork

Ingredients
- 3poundpork roast(bone in or out, doesn't matter)
- 1cupbone brothor water
- 1cupcoconut aminosor fermented soy sauce
- 1cupred onionchopped
- 4inchesfresh gingerpeeled and sliced
- 2limesjuice and zest
- 4clovesgarlicsliced
- 2 to 3tablespoonsarrowroot powder
- 2tablespoonsrice vinegar
- 3tablespoonssriracha sauce
- 1/4 to 1/2cupDietz Sweetor coconut sugar for non-keto
- 2tablespoonstoasted sesame seed oil
- 2tablespoonssesame seeds
- saltto taste
Instructions
Cut the thawed pork roast into 4-inch cubes and away from any pork bones and place in the stainless steel insert of your Instant Pot.
Add the bone broth, coconut aminos (or fermented soy sauce), onion, and ginger. Place the lid on the pot and seal the vent.
Press the "Manual" or "Pressure Cook" button and adjust the time to equal 20 minutes of cooking per pound of roast. So, a 3-pound roast would cook for 60 minutes.
When it beeps, immediately release the pressure.
Using tongs or a slotted spoon, remove the chunks of cooked pork from the liquid in the pot. Set on a plate and use forks to pull and shred the pork apart.
To the liquid in the Instant Pot, add the lime juice and zest and garlic cloves.
Use an immersion blender and blend the liquid so that the onion, ginger, and garlic cloves are blended in.
Remove 1 cup of the blended liquid from the pot and whisk in arrowroot powder. Then, return this slurry back to the Instant Pot and whisk until it thickens.
Press the "Keep Warm/Cancel" button and stir in the vinegar, sriracha sauce, sweetener, sesame seed oil, and sesame seeds.
Return the pulled pork to the sauce, stirring to combine. Serve and enjoy!
