But, baby, when it’s cold outside, those aromatic chai spices will warm you from head to toe in no time.
This Keto Instant Pot Chai Hot Chocolate is the ultimate hygge drink you need.
Keto & Non-Keto / Dairy & Dairy-Free Options
I always try to cater to both the keto/low-carb and non-keto folks. This Instant Pot Chai Hot Chocolate is no exception.
As with most of my keto sweets and drinks, a simple sweetener swap is all it takes to turn this drink from keto to non-keto. For this Keto Chai Hot Chocolate, I simply used vanilla-flavored stevia as my sweetener. So, no monk fruit, xylitol, or erythritol.
If you don’t want to use stevia, simply replace the vanilla stevia like this:
- start with 1/3 cup coconut sugar or maple syrup before cooking; taste and add more if more sweetness is desire after cooking (<– Save 10% on my favorite coconut sugar from Wildly Organic with my discount code NOURISHING)
- whisk in 1 teaspoon vanilla after releasing pressure when you add the baking chocolate, just before serving
As for the dairy…
Well, it’s not advised to cook milk or heavy cream in the Instant Pot because it separates, scalds, and often curdles.
So, if milk is all you have, better to make this Chai Hot Chocolate on the stovetop, not in your Instant Pot.
If you’re dairy-free like me, then any dairy-free milk will work — though I have a special fondness for thick and creamy coconut milk and feel it blends the best with both the chai spices and chocolate in this drink.

How to Make Keto Instant Pot Chai Hot Chocolate
Are you ready for easy? Remember, I don’t do complicated, and I’m sure as heck not going to make a hygge drink like this difficult when all I really want to do is curl up with my blanket and a movie pronto!
So, in the Instant Pot, simply combine your dairy-free milk of choice, like full-fat canned coconut milk, with water.
Whisk in raw cacao powder.
Then, whisk in the chai spices. (If using coconut sugar or maple syrup, whisk that in as well.)
Put the lid on your Instant Pot, checking that the seal is in place and the vent is closed. Press the “Manual” button and adjust the time to 2 minutes on high pressure.
When the pot beeps, immediately release the pressure.
Finally, whisk in an ounce of baking chocolate and vanilla stevia (if using).
Serve your Keto Instant Pot Chai Hot Chocolate up in some big mugs and savor!
Keto Instant Pot Chai Hot Chocolate

Ingredients
- 2cansfull fat coconut milk
- 1cupwater
- 1/4cupraw cacao powder
- 1-1/2teaspoonscinnamon
- 1-1/2teaspoonsground ginger
- 1/2teaspoonground cardamom
- 1/2teaspoonground nutmeg
- 1/2teaspoonground cloves
- 1/4teaspoonblack pepper
- 1/4 teaspoonsalt
- 1ouncebaking chocolate
- 15 to 20dropsliquid vanilla stevia
Instructions
Place all ingredients, except the baking chocolate and stevia, into the stainless insert of your Instant Pot.
Place the lid on the pot, checking that the seal is in place and close the vent.
Press the "Manual" or "Pressure Cook" button and adjust the time to 2 minutes on high pressure.
When it beeps, immediately release pressure.
Whisk in the baking chocolate and stevia.
