When keto-friendly rhubarb is pressure cooked for just 1 minute in water, then sweetened with a keto-friendly sweetener (like my blend, Dietz Sweet), the result is this stunning, tart-sweet drink: Instant Pot Rhubarb Juice!
Except it’s not really juice…
Because it’s not made in a juicer.
It’s more like a tea!
Chopped rhubarb goes into your Instant Pot with water. Set the cook time for 1 minute on high pressure. As soon as it beeps, release the pressure, strain, and sweeten.
A few hours later, when it’s cool, you have a refreshing, summer-appropriate Keto Instant Pot Rhubarb Juice! And a fantastic way to use up a bunch of rhubarb… You should see my rhubarb plants. They’re so big it’s almost other-worldly.
2-Ingredient Keto Instant Pot Rhubarb Juice
Botanically speaking, rhubarb is a vegetable. Yet, most people consider it a fruit, probably because it’s mainly used in sweets — cobblers, pies, etc.
There are just 1.5 grams of net carbs in 1/2 cup of rhubarb, putting it well within low-carb, keto, and/or Trim Healthy Mama (S) or (FP) carb limits.
Through the magic of pressure cooking (and in just 1 minute!), plain ol’ water is infused with not only the tart flavor of rhubarb, but also the beautiful pink color of rhubarb!
What If I Don’t Have An Instant Pot?
If you don’t have an Instant Pot… GET ONE! You’re seriously missing out on some life-changing, time-saving magic in your kitchen! (Read about why I love my Instant Pot so much I bought a second!)
However, if you still want to make this keto rhubarb juice, you can do it without an Instant Pot, too.
I learned about rhubarb juice from my friend Honor, who makes and sells it at our local farmers market. Honor doesn’t have an Instant Pot (although I’ve been trying to convince her to take the plunge for over a year now!).
So, she brings rhubarb and water to a boil on the stove, shuts off the heat, and steeps it for about 15 minutes before straining and sweetening.
The amount of rhubarb and water are the same as my Instant Pot recipe below. I simply adapted Honor’s recipe for the Instant Pot!
So, if you want to make this yummy, healthy, low-carb summer drink without an Instant Pot, you can!
- Place 4 cups chopped rhubarb and 8 cups of water in a large pot.
- Bring to a boil.
- Shut off the heat as soon as it boils and steep for 15 minutes.
- Carefully strain.
- Sweeten the strained juice.
- Cool completely before serving.
As you’ll see in the recipe, though, using an Instant Pot is faster — though not absolutely necessary.
Do I Have To Use A Keto/Low-Carb Sweetener?
You don’t *have* to…
But, if you want your rhubarb juice to be keto/low-carb/THM, then, yes.
My favorite keto sweetener is my own homemade blend — DIY Alternative Sweetener Blend, aka Dietz Sweet.
Trim Healthy Mama’s Super Sweet blend is another keto sweetener option. Or, Lakanto Monk Fruit sweetener will also work.
I have not tried the recipe with stevia only, but here is my favorite brand of stevia that I use to make Dietz Sweet.

Not low-carb/keto or THM? Feel free to use your favorite whole sweetener instead.
- If using a brown sweetener, like maple syrup or coconut palm sugar, the color of the drink will be slightly more brown and darker in color.
- If using raw honey, start with less than the recipe calls for and increase slightly to taste.

Ingredients
- 4cupschopped rhubarb
- 8cupsfiltered water
- 1/2 to 1cupDietz Sweet or your preferred keto-friendly sweeteneror whole sweetener - not keto
Instructions
- Add the chopped rhubarb and water to the stainless steel insert pot of your Instant Pot. I used my 6-quart Instant Pot.
- Place the lid on the Instant Pot and seal the vent.
- Press the Manual button and adjust the time to 1 minute on high pressure.
- When the pot beeps, immediately release the pressure.
- Carefully pour through a fine mesh sieve into a large bowl or pitcher.
- Stir in sweetener, to taste.
- Chill completely before serving.
- Enjoy!

Gorgeous! I get something quite like this when I cook rhubarb for sauce. I’ve saved a little before, but now I’ll stop tossing the rest and try turning it into juice. I wonder if you could use your cooked rhubarb after pouring off some of the juice? Rhubarb puree makes a good ice cream or pancake topping.
Probably so! I hadn’t thought of that because rhubarb is a fairly new food for me. We’d never had it before moving to Minnesota 4 years ago!
