Sushi is NOT just for special occasions around our house!
In fact, sushi is an easy meal that I love to make on weekends AND week nights! Sushi-making is also a fantastic family activity, and everyone can help… whether prepping veggies or shrimp to go inside the rolls or rolling the actual sushi.
So, of course, I employ my trusty Instant Pot to cook the sushi rice for me.
And I make this Nourishing Instant Pot Sushi Rice a little differently than many recipes you’ll find.
1.) I use bone broth instead of water to add that little bit of extra nourishment to an otherwise not-very-nutrient-dense food. (Here’s how to make nourishing chicken foot broth in your Instant Pot!)
2.) Unlike most sushi rice recipes, this one does not use agave nectar or refined sugar, but raw honey instead!
And yes, a sweetener of some sort is necessary because it sort of coats the rice and makes it sticky. Sticky rice = perfect sushi! Raw honey is the BEST whole sweetener, in my opinion.
Why Isn’t It Soaked?
I asked myself the same question…
You see, we soak all our grains, nuts, and legumes to reduce harmful phytic acid — a protective plant compound that prevents humans from absorbing minerals properly. So I tried it…
Total FLOP. 🙁
The rice was mushy, more porridge than sushi rice. So, sadly, I wasn’t able to do a traditional preparation method on this Instant Pot sushi rice, but using the bone broth and raw honey makes it about as nourishing and traditional as I can get it!
Rinse, Rinse, Rinse!
Another note about cooking sushi rice perfectly in the pressure cooker: you gotta rinse that rice!
Seriously, rinsing the rice is an important step you don’t want to skip or forget. Rinsing washes away much of the starch on the rice grains, ensuring that it cooks the best and doesn’t stick to the bottom of your pot.
How to rinse sushi rice?
Place the rice in a fine mesh sieve and run under cold water, shaking the sieve to move the rice around and encourage the starch to wash away. Continue doing this until the water runs clear.
Then, tap off or drain any excess water before adding the rinsed rice to your Instant Pot.
So, follow these instructions, and you’ll have the hardest part of sushi-making — getting the rice right — down!

Nourishing Instant Pot Sushi Rice
You'll love using your pressure cooker to make perfect, easy, and nourishing sushi rice! Cooked in bone broth and no agave nectar, this Real Food Instant Pot sushi rice recipe will be your go-to because it's perfectly sticky and holds together when rolled!
Ingredients
- 3cupsorganic sushi ricerinsed very well
- 3cupsbroth
- 2tablespoonsrice vinegaror apple cider vinegar
- 2tablespoonsraw honey
Instructions
- Start by rinsing the rice under cold water until the water runs clear.
- Add the rice to the stainless steel insert of your Instant Pot.
- Add the remaining ingredients, stirring only slightly.
- Put the lid on the Instant Pot, seal the vent, and press the "Manual" button.
- Adjust the time to 3 minutes on high pressure.
- When it beeps, allow pressure to naturally release for 10 to 15 minutes.
- Then, release any remaining pressure. (There probably won't be any or much.)
- Remove the lid from the Instant Pot and fluff the rice with a fork.
- Finally, remove the stainless steel insert from the Instant Pot so the rice can cool more quickly.
- When the rice is cool, but not cold, roll your sushi!
