You guys know I’m all about simple and easy meals whenever possible. Every once in a while, I’ll get the itch to try something gourmet and extravagant, but most of the time I just want to make simple, yummy food which also happens to be healthy.
I also think that Real Food should be available to the masses and should be easy and quick to prepare most of the time.
This recipe is all that.
With just a few basic and easy-to-find ingredients (holla!) and your Instant Pot or slow cooker, you can have a nourishing dinner on the table that literally takes less than 5 minutes of hands-on time.
This Super Simple Instant Pot Salsa Verde Chicken recipe is suitable for Paleo, Whole30, 21-Day Sugar Detox, and all Real Food lifestyles. 😉

Keepin’ It Paleo/Whole30 Serving & Topping Ideas
- avocado or guac
- fermented salsa or pico de gallo
- use lettuce wraps or serve on a bed of lettuce
- topped with Dairy-Free Queso
- serve on a bed of Smokey Turmeric Cauli-Rice or plain cauli-rice (here’s how to make your own!)
- fresh cilantro
- diced onions and peppers, raw or cooked
- fresh-squeezed lime
- Fermented Cilantro Chimichurri
- use grain-free tortillas, such as Siete

- lettuce wraps, blue corn taco shells, or sprouted corn tortillas
- raw cheddar
- fresh cilantro
- avocado or guac
- fermented salsa or pico de gallo
- cultured sour cream, such as Nancy’s brand
- fresh-squeezed lime
- Fermented Cilantro Chimichurri
- soaked and cooked black beans and/or rice or quinoa
How to Make This Super Simple Instant Pot Salsa Verde Chicken
First, place thawed chicken breast in the insert pot of your Instant Pot.
Next, add the bone broth. If you don’t have bone broth, you can use an equal amount of water.
Then, add the seasonings and salsa verde.
Place the lid on the Instant Pot, press the “Manual” or “Pressure Cook” button, and adjust the time to 10 minutes on high pressure.
When it beeps, immediately release pressure.
I like to utilize my stand mixer fitted with the paddle attachment to shred the cooked chicken. It really saves time and an arm workout!
Once shredded, put the chicken back into the pot and let it soak up the juices and spices.
Serve however you like or freeze for later! Crock Pot/slow cooker instructions are in the recipe below.

Ingredients
- 1-1.5poundsbonelessskinless chicken breast
- 1 to 2teaspoonssaltto taste
- 2teaspoonscumin
- 1/2 to 1teaspoonchipotle powderdepending on how spicy you like it
- 1/2teaspoongarlic powder
- 1-1/2cupssalsa verdehomemade or in a jar, if you can find a brand with clean ingredients. I love Trader Joe's Salsa Verde!
- 1/2cupbone broth
Instructions
- Combine seasonings together in a small bowl and mix well.
- Lay the chicken in the bottom of your Crock Pot or Instant Pot.
- Add the bone broth.
- Sprinkle the seasoning blend over one side of the chicken.
- Then pour the salsa verde over the top.
Crock Pot
- Cook on low for 3 to 4 hours.
- Remove from the Crock Pot and shred with 2 forks or in a stand mixer with the paddle attachment (my preference!). Return to the Crock Pot and stir to mix it in with the yummy juices.
- Serve and enjoy!
Instant Pot
Place the lid on the Instant Pot and seal the vent. Press the Manual button and adjust the pressure to high. Set the time for 10 minutes.
Immediately release the pressure.
- Remove from the Instant Pot and shred with 2 forks or a stand mixer with the paddle attachment (my preference!).
- Return to the Instant Pot and stir to mix it in with the yummy juices.
- Serve and enjoy!

Can you use frozen chicken? Has anyone tried this?
I haven’t tried it with frozen chicken. You would need to increase the cook time, just not sure by how much. Please let us know if you try it!

Is it possible for this recipe to be made in advance and frozen? If so, how would you suggest doing so? Would it be easier to make everything and then freeze it ready to go?

How would you go about reheating if made as a freezer meal?
I would thaw in the fridge first (or warm water in the sink) and then reheat on the stove in a skillet. I’ve done that with this meal many times!
