Keto & Whole30 Blackened Salmon & Cajun Zoodles (in 1 skillet!)
Here’s a Whole30 and keto version of a classic Cajun favorite — Blackened Salmon and Cajun Zoodles! This is a perfect meal when you forget to meal plan because it takes just 30 minutes and 1 skillet!
You just can’t argue with a meal that packs a nutrient-dense punch, has green veggies, and only requires you to dirty up 1 skillet, can you?
Good! Because that’s exactly what this meal is!

I have a few meals up my sleeve that I turn to on warm days when I want to procrastinate dinner so I can spend more time outside.
This Blackened Salmon with Cajun Zoodles is PERFECT for me (and you too)!
In 30 minutes you’ll be chowing down on this delicious Whole30 Keto Blackened Salmon and Cajun Zoodles — as long as you have some thawed salmon filets in your fridge!
Another go-to meal for when I “forget” to plan or just don’t want to spend much time in the kitchen is my Garlic & Rosemary Sheet Pan Salmon!
Keto & Whole30 Blackened Salmon & Cajun Zoodles (in 1 skillet!)
Wild-caught salmon is FULL of fat-soluble vitamins, Omega-3 fatty acids, and minerals. It’s one of the most nutrient-dense foods on the planet — and we try to eat it at least once per week.
Zucchini is a fiber-rich, low-carb green veggie that also happens to be really affordable (or almost free when you grow it yourself!)
Cajun seasoning brings tons of flavor and a bit of spice to this entire dish, transporting your tastebuds to a Louisiana bayou. Seriously, it’s better than a lot of restaurant salmon I’ve had!
With healthy fats, green veggies, and nutrient-dense salmon, this is an easy Whole30 and keto meal that also works for Trim Healthy Mamas!
Making Zoodles With A Spiralizer
If you haven’t invested in a spiralizer, it’s time, Momma. (Here is the spiralizer I have.)
You can transform all kinds of veggies — sweet potatoes, butternut squash, cucumbers, zucchini, and more — into “noodles” that are lower in carbs and have more nutrition than typical pasta.
Zucchini has a high water content, so you’ll have to squeeze water out of it before cooking (or end up with soggy, watery zoodles).
Simply spiralize straight into a large flour sack towel. Then take the corners of the towel and tie them together to form a sort of sack.
Hang that “sack” over your kitchen faucet or from a cupboard knob over a bowl so the water can drip and drain out.
After 10 minutes or so, you can squeeze the sack of zoodles very tightly to force water out. Once you squeeze all the water out, you’re ready to make zoodles!
Whole30 Keto Blackened Salmon with Cajun Zoodles
Here's a Whole30 and keto version of a classic Cajun favorite -- Blackened Salmon with Cajun Zoodles! This is a perfect meal when you forget to meal plan because it takes just 30 minutes and 1 skillet!
Ingredients
- 3or 4 medium-size zucchini
- saltto taste
- 1red bell pepper
- 2clovesgarliccrushed
- 4tablespoonsbutter or gheeseparated
- 1/2 to 3/4poundwild caught salmon
- 1/2teaspoonsalt
- 1tablespoonCajun seasoning
Instructions
- First, spiralize the zucchini to create noodles, or "zoodles". I highly recommend a Spiralizer for this, as it creates perfect, pasta-size zoodles!
Set the zoodles on a towel and sprinkle with 1/2 teaspoon of salt.
- Set aside to "sweat".
- Finely dice the bell pepper and set aside.
- Lightly sprinkle salt on one side of the salmon fillets. Then generously shake Cajun seasoning over the salt.
- Turn the salmon over, and repeat, first salt, then Cajun seasoning.
- Melt 2 tablespoons butter or ghee in a cast iron skillet on medium-high heat.
- Add the salmon to the skillet and cook about 2 minutes.
- Flip the fish over and cook 2 or 3 minutes longer. Remove to a plate and set aside.
- Don't worry about washing the skillet; you're about to use it again!
Add the additional 2 tablespoons butter or ghee to the skillet, then the diced bell pepper. Cook 2 minutes.
Once you've squeezed all the water you can out of the zoodles, add it to the skillet with the bell pepper and stir to combine.
- Add more salt and/or Cajun seasoning to taste. We like our Cajun Zoodles spicy, so I sprinkle on a pretty generous amount. 😉
- Saute the zucchini noodles and bell pepper together until the zoodles begin to soften.
- Add the garlic, stir to combine, and remove from the heat.
- To serve, place a pile of the Cajun Zoodles on a plate, lay the Blackened Salmon on top, and garnish with a wedge of lemon.
