Y’all know I’m all about meal prepping in the Instant Pot!
In fact, a huge portion of my weekly meal prepping is done on Sunday afternoons, both of my Instant Pots out on the counter, working for me as handy kitchen assistants.
I actually have an entire post dedicated to meal prepping with your Instant Pot — 6 Instant Pot Meal Preps That’ll Save Your Sanity!
With just one Instant Pot and less than 3 hours of time, you can prep meal components, such as a whole chicken and meat broth, rice, quinoa, or a blended soup. Then, warm these things up throughout the week, pack them in lunches, or use them in other recipes you’re making.
I just adore using my Instant Pots — here’s why I have 2 — for meal prep!
So, when my friend Carrie, from The Clean-Eating Kitchen emailed me about her new book, I couldn’t wait to share it with you!
Carrie, MBA, MPH, shares easy, gluten-free, dairy-free recipes on her site and on her YouTube channel.
As a thyroid cancer survivor, she is devoted to helping women recover from chronic disease. Carrie has used a Real Food diet to recover from PCOS, chronic migraines, anxiety, and autoimmune disease as well.

Instant Pot Salmon & Veggies with Lemon-Butter Sauce: Instant Pot Meal Prep
This recipe can be made up to 4 days in advance and stored in glass containers (like these).
It makes 5 servings, so just think…
That’s one meal for a family of 5 that’s done and only needs to be warmed up.
For one person, that’s 5 days in a row of individual lunches to take to work or send to school.
For a couple, that’s 2 nights of dinner during the week — with one meal leftover for a lunch or to invite a friend over.
With nourishing, wild-caught salmon and hearty red potatoes and carrots, this Instant Pot Salmon and Veggies is so tasty with a yummy lemon-butter sauce.
The salmon and veggies go in the Instant Pot at the same time, and everything cooks together.
You don’t even have to thaw the salmon filets first! 🙂
So, from The Healthy Meal Prep Instant Pot Cookbook, here’s an awesome Instant Pot meal prep recipe that’s flavorful and simple.

Pour the broth into the inner pot and add the potatoes and carrots. Place the salmon fillets,
skin-side down, on top of the vegetables.
Pour the melted butter over the salmon and sprinkle the salt and garlic powder over the top.
Lock the lid into place. Select Pressure Cook or Manual; set the pressure to High and the time to 5 minutes. Make sure the steam release knob is in the sealed position. After cooking, naturally release the pressure for 10 minutes, then quick release any remaining pressure.
Unlock and remove the lid. Serve immediately garnished with black pepper and dill, or place the salmon and vegetables in an airtight container and refrigerate for up to 4 days.
