The classic summer dish that you’ll find at every picnic, barbecue, and potluck this summer?
Potato salad, of course!
And there are a bazillion different ways to make potato salad.
With relish. Without relish. With onions. No onions. Boiled eggs. No boiled eggs.
Yet the one thing all potato salads have in common are… the potatoes.
But, what if you want to enjoy the flavor and texture of classic potato salad — but without the starchy carbs in the potatoes themselves? Or if nightshades are an issue for you?
You use my favorite potato stand-in! Celeriac! (aka celery root)
Why Celeriac Is My Favorite Potato Substitute
I have successfully replicated the texture and flavor of potatoes by using celeriac in my Low-Carb/Keto Vegetable Beef Stew, Instant Pot Green Chile Chicken Chowder, and my Keto Instant Pot Clam Chowder. I promise we don’t miss the potatoes AT ALL in either of those recipes! 🙂
Not only does celeriac have nearly half the net carbs of potatoes (7g in 100g of celeriac vs. 15g in 100g of potatoes), it’s also lower in calories and higher several in essential vitamins and minerals.
For instance, 100g of potatoes contains 1.9mcg (2% RDA) of Vitamin K, while the same amount of celeriac contains 41mcg (51% RDA)!
Celeriac contains more calcium, phosphorus, zinc, manganese, and selenium than potatoes, too!
(Potatoes are still higher in Vitamin C, folate, and potassium, so don’t totally hate on the potatoes.) 😉
Although, if you’re new to celeriac, I highly encourage you to give it a try. It’s delicious and a great way to try a veggie your family may be unfamiliar with!

How To Make Low-Carb/Keto Classic No-Potato Salad
This healthy summer side dish is perfect for BBQs, picnics, and potlucks! And it’s so simple to prepare.
Simply peel, cube, and boil the celeriac until it’s fork-tender.
Drain the celeriac in a colander and rinse with cool water. Rinsing removes extra starch and cools the celeriac so you can make the salad more quickly.
Combine diced red onion, chopped celery, peeled and chopped boiled eggs (if using), garlic, and mayo in a bowl.
Add the cooked and cooled celeriac and stir to combine.
Taste the salad and season to taste with salt and pepper.
That’s it!
You can cover and refrigerate this no-potato salad until ready to serve.

Ingredients
- 2-1/2poundsceleriacpeeled and cubed
- 2cupsred oniondiced
- 3ribs celerydiced
- 6hard-boiled eggspeeled and diced (omit if egg-free, here's how I make perfect, easy-to-peel eggs in my Instant Pot!)
- 3clovesgarlicminced
- 1cupmayonnaisemy favorite homemade mayo or my favorite egg-free mayo
- yellow mustardto taste
- salt and pepperto taste
Instructions
- Bring 2 quarts of water to a boil. Add the peeled and cubed celeriac and cook until fork tender.
- Drain and rinse under cool water.
- In a large bowl, combine the boiled celeriac with the remaining ingredients and stir to combine.
- Cover and refrigerate for at least 4 hours.
- Serve!
- Keep refrigerated.
Recipe Notes
There are a little more than 7g net carbs in 1 cup of cooked and drained celeriac.
Trim Healthy Mamas, you can enjoy up to 3/4 cup of this in an S setting. Any more than that will put you in very healthy Crossover (XO) territory.
