My Instant Pot is kinda taking over my life. I mean, I’ve basically abandoned my slow cooker, stove, pots, and pans for this gadget. It’s a little bit ridiculous.
Or is it???
Like I said, tender, fall-off-the-bone, melt-in-your-mouth ribs in January. Where you live, that might not be such a big deal. But for me? Living less than 100 miles from the Canadian border? Ribs in January is a dadgum miracle.
So, these ribs get nice and tender in the IP, then you finish them off on the grill or in the oven to crisp up the dry rub.
Let’s Talk About That Dry Rub…
This is our Super Secret Family Dry Rub recipe. And I don’t just mean my immediate family. My husband’s uncle came up with this dry rub, and now it’s the ENTIRE family’s favorite!
Of course, I’ve made some slight Real Food adaptations, not the least of which is subbing my keto-friendly DIY sweetener blend, Dietz Sweet, in place of cane sugar. This alone cuts WAY down on the sugar (like, to zero) and carb content. So you can keep licking those fingers, Momma!
This dry rub is utterly loaded with flavors — spicy, salty, slightly sweet. Coupled with perfectly tender ribs, thanks to the Instant Pot!, this is the stuff indoor cookout dreams are made of.
Winter or Summer, you can have Real Food ribs!
Instant Pot Dry Rub Rack Of Ribs

Ingredients
- 1rack pastured pork ribs
- Super Secret Family Dry Rub Recipe — as much as it takes 🙂
Instructions
- First, generously sprinkle the Super Secret Family Dry Rub all over the ribs, flipping them over to get both sides covered in rub mix.
- Next, place 1 cup of water and the metal trivet into the stainless steel insert of the Instant Pot.
- Make a ring with the ribs and place them on top of the trivet.
- Secure the lid on to the Instant Pot and make sure the vent is sealed.
- Press "Manual" and adjust the time to 30 minutes on high pressure.
- When it beeps, immediately release pressure and remove the rack of ribs from the pot.
- Place the cooked ribs, meaty side up, on to a metal baking tray.
- Generously coat the meaty side of the ribs in more dry rub.
- Place the ribs under the broiler of your oven for 3 to 5 minutes or until the spice mixture becomes crisp. Or, finish your ribs off on your grill, medium-high heat, for 5 to 10 minutes.
- Serve and enjoy licking the sweet-spicy-salty dry rub off your fingers!
Super Secret Family Dry Rub Recipe
Spicy + salty + sweet + smokey = all the right words when it comes to the perfect dry rub! Here's our family's super secret recipe, with my Real Food adaptations!
Ingredients
- 1/4cuppaprika
- 1/4cuppink Himalayan salt
- 1/3cupDietz Sweetor coconut sugar if whole sweetener is preferred; not keto
- 2tablespoonsblack pepper
- 1tablespoongarlic powder
- 1tablespoonchili powder
- 1teaspoononion powder
- 1teaspoonground chipotle or cayenne pepper if you like extra spicy!
Instructions
- Add all ingredients to a glass jar.
- Cover and shake to combine.
- Enjoy on ribs, grilled chicken, chicken wings, and more!
Now, How To Finish?
Towards the end of the recipe, you’ll notice the finishing step of either grilling or broiling the pressure cooked ribs. This is necessary if you want that rub to be a nice, thick, crusty, crispy coating when you bite into your amazing ribs.
Technically, you can eat them straight out of the Instant Pot. However, you’ll understand why that extra few minutes to crisp up the dry rub is necessary. Pinky swear.
So, in the winter, we use the oven, obs. In the summer, we throw ’em on the grill. Watch the ribs closely. They’re done when the rub dries out and crisps, but don’t let it burn.
In my very Southern personal opinion, this is the BEST way to cook ribs without a genuine bar-b-cue or smoker. The ribs are falling off the bone and that rub is finger-lickin’ amazing!
