Perfect Southern Cornbread {in a blender!}
No Southern girl should leave home without it…
A reliable recipe for good, homemade cornbread to serve with beans, chili, or even for breakfast.
And that cornbread shouldn’t come from a box!
In my opinion, the perfect Southern cornbread has these qualities:
- It should be neither too moist nor too dry, a slightly cake-like texture.
- It must be slightly sweet.
- It should not have bits of other food in it: no whole corn kernels, no onions or peppers.
I think this one meets the criteria.
This recipe is no-fuss. If you need to be dairy-free, use coconut milk or another non-dairy milk and coconut oil or avocado oil.. Want gluten-free? Use sprouted rice flour or your favorite gluten-free flour blend. It’s super easy to customize this recipe to your needs!
Because this recipe isn’t soaked, I recommend using sprouted flour and masa corn meal to produce an easily digestible end result.

Here’s what you need:
- 1-1/3 cups milk of your choice
- 1/3 cup honey
- 3 eggs
- 6 Tablespoons melted butter or other fat of your choice
- 1 cup masa cornmeal (or sprouted cornmeal)
- 1 cup flour of your choice
- 1 teaspoon salt
- 1 teaspoon baking powder
Here’s how to do it:
Preheat your oven to 350-degrees Fahrenheit. Grease an 8×8 glass baking dish, a 9″ pie dish, or a 10″ cast iron skillet with any fat. Butter, tallow, lard, ghee — they’ll all work.
Combine ingredients in the order listed in your blender. Putting the wet ingredients in before the dry ingredients will make the blending so much quicker and easier.
Blend on low speed for 60 seconds, or until the batter is smooth.
Pour into greased baking dish. Bake 25-30 minutes. Cornbread is done when a toothpick inserted comes out clean.
Serve with a generous amount of butter.
Tip for Leftovers
Warm some milk or heavy cream over low heat until it steams. Do not let it bubble. Cut a slice of leftover cornbread and place it in a bowl.
Pour on your desired amount of warmed milk or cream, then drizzle honey or maple syrup on top.
