I had guests showing up in an hour for dinner and 5 pounds of beets in my fridge, just staring at me to do something with them.
That’s usually how I come up with this stuff, you guys.
I do NOT sit around a brainstorm recipe ideas for you. I do not browse the pages of Saveur magazine looking for inspiration. Nor, unfortunately, do I go on retreats alone to meditate in the woods and become enlightened on what I’m going to cook, photograph, and blog for you.
No, I do it the unorganized, amazingly messy way — by just experimenting in my kitchen and hoping for the best. 🙂
So, with this beautiful burgundy Clean-Eating Beet and Blood Orange Slaw, I shredded and chopped and squeezed and sprinkled and tasted until THIS happened — a beet and carrot slaw with blood orange juice, fresh ginger, cilantro, sesame seeds, and red pepper flakes. Slightly sweet, spice at the end, crunchy and earthy all the way through, this simple slaw comes together in minutes! And it’s perfect for all Real Food diets, like Paleo and Whole30 (just omit the stevia).
You’ll love how well this slaw goes with pretty much everything — from bar-b-cue to Asian food to alongside or on top of your favorite cheeseburger!
It was a Hail Mary side dish for me… but it doesn’t have to be for you. All you need is 5 minutes of hands-on time (and preferably about an hour to let it sit and let those flavors meld in the fridge)!
Clean-Eating Beet & Blood Orange Slaw
Here's a beet and carrot slaw with blood orange juice, fresh ginger, cilantro, sesame seeds, and red pepper flakes. Slightly sweet, spice at the end, crunchy and earthy all the way through, this simple slaw comes together in minutes! And it's perfect for all clean-eating diets, like Paleo and Whole30 (just omit the stevia).
Ingredients
- 3cupspeeled and shredded beets
- 2cupsshredded carrots
- 1/2cuppacked, chopped cilantro
- 1blood orangejuiced
- 3tablespoonsolive oil
- 2tablespoonswhite wine vinegar
- 1tablespoonsesame seeds
- 1teaspoonfreshly grated ginger root
- 1pinchstevia powder or 1 drop stevia extract omit for Whole30
- saltto taste
- red pepper flakesto taste
Instructions
- Shred the beets and carrots straight into a medium-size serving bowl. I use my Salad Shooter to do this in a few seconds!
- Add the remaining ingredients and stir to thoroughly mix.
- Taste.
- Adjust salt, stevia, vinegar, etc., to your preference.
- If you can make this at least an hour in advance, it gives flavors time to develop. If not, it's still yummy and super good the next day!
