We’ve been in the midst of a looooong heat wave, and we don’t have air conditioning.
88 degrees with 70% humidity and bright sun is H-O-T, y’all.
Yeah, I know it could be worse. I could live in Arizona where it’s regularly over 100 degrees. Or, I could live in the South with 100-degree temps AND sticky humidity. (Been there, done that, thanks.)
But, guess what? In Arizona and in the South, they have air conditioning! Relief from the heat is literally inside your front door. Or, in the nearest restaurant, mall, or grocery store.
Ok, I sound whiny now. Truthfully, whether we’re in the middle of a heat wave or not, I love easy, quick, icy-cold, health and low-carb slushie drinks!

I’ve made it a bit of a tradition here at All The Nourishing Things to post a healthy, usually keto slushie recipe every summer.
In 2018, when my in-laws brought me a case of fresh peaches all the way from Texas, I gave you a Healthy Vegan Peach Slushie recipe.
In 2019, I knocked it out of the park with my Low-Carb Cherry Lime Slushie recipe.
And now? I’m bringing you a healthy Keto Frozen Mint Lemonade!
Keto Frozen Mint Lemonade?!
That’s right, y’all. Not only is this healthy slushie recipe icy cold and crazy refreshing, it has ZERO added sugar and boasts the benefits of fresh lemons and fresh peppermint.
Did you know lemons and peppermint are loaded with goodness for your health!
- Lemons are full of Vitamin C, they alkalinize the body, and they’re great for our livers and digestion.
- Fresh peppermint is also great for digestion, it’s anti-inflammatory, and it freshens the breath.

How to Make Keto Frozen Mint Lemonade
Y’all know I don’t do complicated, so this recipe takes exactly as much effort as walking from your hammock to your kitchen and back, ok?
You need:
- sparkling water (but regular water works too)
- whole lemons — we’re gonna cut them open, pop the seeds out, and cut the flesh away from the peel
- stevia — this is the only kind I use
- 8-10 fresh peppermint leaves
- ice, ice baby
Put all those ingredients into your blender — I love my BlendTec — and blendy, blend!
It turns a lovely, herb-y green color and will make you pucker and smile at the same time.
Recipe FAQs & Ingredient Subs
Can I use bottled lemon juice if I don’t have whole lemons?
Yes, use about 1 cup of bottled lemon juice, preferably organic without any added ingredients. Whole lemons provide fiber, however, so don’t be scared to blend up a whole lemon.
Can I use another herb?
Don’t have straight peppermint leaves? That’s ok! You can use any variety of peppermint (ie. apple mint, spearmint, etc.). You could also use basil, but that will make a basil lemonade that isn’t minty at all. Or, leave the mint out for a keto frozen lemonade.
Can I sub peppermint essential oil or extract?
No, please don’t do that. If you don’t have peppermint leaves, just make a healthy frozen lemonade.
I don’t use stevia/don’t need to be keto. Can I use another sweetener?
For sure. I recommend raw honey to taste.
Do kids like this?
That’s a loaded question! 😛 My kids love this keto frozen lemonade recipe! They’re 16 and 15 and have grown up on healthy foods and fresh herbs, though. If yours are used to powdered lemonade mix and peppermint-flavored gum, they might not love this. Give it time. It’s really tasty!
Keto Frozen Mint Lemonade

Ingredients
- 1-1/2cupssparkling water
- 3mediumlemonssliced into quarters, seeds removed, flesh cut away from peel
- 1/8teaspoonpowdered stevia
- 8-10fresh mint leaves
- 1-2cupsice
Instructions
Add the ingredients to a high-speed blender in the order listed.
Cut the lemons into quarters, pop out the seeds, then use a knife to slice the flesh away from the peel. Place the lemon flesh into the blender. Discard or compost the lemon peels.
Blend for about 45 seconds.
Serve and enjoy!
