Salmon patties — or croquettes — were a staple of my Southern childhood.
My mom and Memaw made them regularly. We always called them salmon croquettes, but I rarely hear that word nowadays. When you combine canned salmon, eggs, flour, and seasonings, most people think “salmon patties”.
Crispy on the outside and moist on the inside, salmon patties were one of my favorite comfort foods as a kid.
Memaw served hers with a side of black-eyed peas, and Mom always served ours with buttery mashed potatoes and white gravy.
Keto Southern Comfort Food
Not wanting to be without the comfort foods of my childhood, I have learned to recreate my favorites. Without white flour and excess sugars.
Canned salmon has always been an easy and frugal way to benefit from nutrient-dense wild salmon. Although, I’m 99% sure my Mom and Memaw weren’t seeking out wild-caught canned salmon.
While the two generations before me used white flour and cornmeal to bind their salmon croquettes together, I now use flavor-less coconut flour. (<– Save 10% on my favorite coconut flour with my discount code NOURISHING!)
Instead of Crisco in my frying pan, it’s one of my favorite Traditional fats — such as lard or tallow, or expeller pressed coconut oil that has no coconut flavor. (<– Save 10% on my favorite coconut oil with my discount code NOURISHING!)
One thing hasn’t changed, however — keto or not, Southern salmon patties are always fried in a cast iron skillet. I actually use my Memaw’s skillet for my Keto Salmon Patties. <3
Southern Keto Salmon Patties are Whole30, paleo, nut-free, & GAPS-friendly too!
That’s right, y’all.
No matter your healing diet, you can enjoy these Whole30 and Keto Salmon Patties.
I’ve left out all nut flours so these salmon patties are still low-carb, but also allergy-friendly.
Those on gut-healing diets such as GAPS and SCD can also enjoy these low-carb salmon patties because they are filled with gut-friendly ingredients.
Whole30 Salmon Patties make an excellent meal prep, too. It’s easy to fry up a batch on Sunday afternoon and reheat throughout the week!
How to Work with Canned Wild-Caught Salmon
Canned salmon contains the salmon bones — which are 100% edible. If you’d like to add calcium and other valuable minerals to your Keto Salmon Patties, simply leave the bones in the salmon and mix the patties together.
However, my family prefers to keep the bones out of our paleo salmon patties for textural reasons.
How to prep canned salmon for low-carb salmon patties:
- Use a can opener to open the can.
- Drain out all the liquid.
- Remove the chunk of salmon from the can.
- Where it naturally opens up, there will be spine and rib bones. Use your fingers to pick these tiny bones out.
- There are often several natural openings in canned salmon, all containing a string of spine bones with skinny rib bones, so pick through your canned salmon carefully.
How to Make Southern Keto Salmon Patties
Begin by dicing some yellow onion and sautéing it until soft in a skillet. Set aside.
Add canned salmon to a large mixing bowl (bones removed first, if desired). Then, add the remaining ingredients, including the cooked onion.
My Mom and Memaw always used their hands to mix, but you can use a large spoon if you like. Don’t over-mix, however. The best salmon patties still have chunks of juicy salmon in them!
Mix just enough to incorporate the eggs and flour so that the patties bind together.
Heat a few tablespoons of fat in your cast iron skillet. Next, form the salmon mixture into patties — about the size of your palm and approximately 1/2 inch thick.
Fry one side of the keto salmon patties until browned and crisp. Then, flip over and cook the other side.
Remove the salmon patties to a paper towel-lined plate while you finish cooking. Depending on the size of your skillet, you may be able to cook 2 to 4 salmon patties at once.
Recipe Subs & FAQs
Do I have to use coconut flour?
Yes, I developed this grain-free salmon patties recipe with coconut flour. I have not used any other grain-free flours. I can assure you that there is zero coconut flavor in the finished salmon patties!
My skillet gets dry after frying one batch. Should I add more fat?
Yes! It is normal for the patties to absorb the frying fat. Add a couple of tablespoons of fat when your skillet is dry or nearly dry until all your patties are cooked.
How to store and reheat leftovers?
Store your leftovers in any airtight container. Reheat in a warm oven.

If you’re not trying to stay low-carb, Whole30, paleo, or GAPS, go with classic Southern sides, like mashed potatoes and black-eyed peas. Or fried okra!

Ingredients
- 1/2cupdiced yellow onionsauteed
- 214-ouncecans wild-caught salmonbones removed, if desired
- 2-4clovesgarlicminced
- 1/4cupchopped parsleyor cilantro, packed
- 1lemonjuiced
- 1/2cupcoconut flour
- salt and pepperto taste
- 6tablespoonsnourishing fat for fryingcoconut oil, lard, tallow, avocado oil
Instructions
Saute the onions first and set aside.
Combine the remaining ingredients in a large mixing bowl, including the cooked onions. Mix until it holds together.
Heat 2 tablespoons fat in a cast iron skillet on medium-high heat.
Form patties about the size of your palm and place them in the heated fat.
Reduce heat to medium and cook each side of the salmon patties until browned and crisp.
Transfer to a paper towel-lined plate when cooked and finish frying the remaining patties.
Serve immediately or cool, then store in an airtight container until ready to reheat.
