Salmon & Wild Rice Burgers With Avocado-Garlic Aioli {gluten-free, dairy-free, egg-free option}

Yet, it can be transformed into such deliciously nourishing meals!
Canned salmon — wild-caught, of course — is one of my must-have pantry staples. When I have a can or two of salmon in my pantry, I know I can forget to plan dinner or thaw out meat and we’re still going to eat well.
My family is still getting all the benefits of wild-caught salmon — like Omega-3 fatty acids, Vitamin D, and loads of B vitamins! — but for a fraction of the cost over buying fresh or frozen!
I added my favorite local grass — wild rice! — to the mix to create these Salmon and Wild Rice Burgers.
Salmon and Wild Rice Burgers
There are no specialty items in this easy recipe. I’d bet you’ve already got most, if not all, the ingredients in your pantry already. And if you don’t, you can easily find them at your local grocery store. Except maybe the wild rice…
True wild rice can be hard to find, depending on where you live. In Northern Minnesota, I have good friends who go out in canoes and harvest wild rice from our pristine local lakes. It’s such a special food.

I prefer wild rice for a few reasons…
- It’s a local food for me. Northern Minnesota is world-famous for wild rice harvested using Native practices. I’m spoiled!
- It has 30 times more antioxidants than white rice, so it’s much more nutrient-dense!
- Wild rice isn’t actually rice at all; it’s a native grass!
- It has 50% more protein than brown rice.

Crack open your cans of salmon, add wild rice (or other grain), mix in spices, and bake! I’m all about easy weeknight dinners… who’s with me?!
Oh! I almost forgot… these babies make fantastic leftovers… COLD! No need to reheat the next day (unless you want to). Take ’em straight outta the fridge. They taste like a salmon salad, especially with some of that leftover avocado-garlic aioli…
Let’s Talk About That Avocado-Garlic Aioli!
This sauce/dip/drizzle is a must-make! And, it’s soooooo easy, so why not?
Aioli (pronounced ay-O-lee) is simply mayo that’s seasoned/mixed with garlic (or other herb or spice). Many restaurants serve dishes with aioli because it adds a creamy texture and a tangy flavor element. It’s amazing on sandwiches and wraps, with chicken, or in this case, with Salmon and Wild Rice Burgers!
Seriously, my husband (who is not a fan of fancy sauces or avocados) went back for seconds… and then thirds of this Avocado-Garlic Aioli!
It’s creamy, tangy, garlicky, and is a pretty sneaky way to get avocado-haters to come back for more. Plus, can we just have a moment of silence to give thanks for healthy fats? 😉
Although you can make aioli by hand, I highly recommend a food processor to achieve perfect creaminess.
Chipotle powder is an optional, but highly recommended addition. I adore chipotle powder in almost all the things, so my tastebuds just crave it. If you’re not a chipotle fan, leave it out. I promise we can still be friends. 😉

Salmon & Wild Rice Burgers With Avocado-Garlic Aioli

Ingredients
Salmon & Wild Rice Burgers
- 46oz cans wild-caught salmon
- 1cupcooked wild rice*Here's how to cook wild rice in your Instant Pot!
- 2eggssee notes below for egg-free option
- 2tablespoonslemon juice
- 1teaspoonsalt
- 2teaspoonsdried parsleyor 2 tablespoons freshly chopped
- 2teaspoonsgarlic powder
- 1teaspoononion powder
Avocado-Garlic Aioli
- 1/2an avocado
- 1/4cupmayohomemade, or egg-free mayo
- 2teaspoonslemon juice
- 4clovesgarlicminced
- salt and pepperto taste
- 1/4 to 1/2teaspoonor more! chipotle powder - optional
Instructions
Salmon & Wild Rice Burgers
- Preheat your oven to 375 degrees Fahrenheit and line a baking tray with unbleached parchment paper.
- Mix all ingredients together, but do not over-mix. You want to have lovely chunks of salmon in each burger.
- Form into roughly 1/2-cup size patties.
- Lay the burgers on the prepared baking tray.
- Bake 30 to 35 minutes or until golden brown.
- While the burgers bake, make the Avocado-Garlic Aioli.
Avocado-Garlic Aioli
- Combine the aioli ingredients in a food processor.
- Process on high speed until smooth.
- Serve alongside Salmon & Wild Rice Burgers.
Recipe Notes
*or other cooked grain such as sprouted brown rice or quinoa
Egg-Free Option:
Combine 2 tablespoons ground chia seeds (grind first, then measure) and 6 tablespoons of water in a small bowl. Set aside to "gel" for 5 minutes before adding to salmon burger mix.

- Try a homemade, egg-free mayo — like this one from my friend Renee at Raising Generation Nourished
- Use a store-bought, vegan mayo — like Sir Kensington’s. It has sunflower oil, which I typically stay away from, but I’m also not eating this mayo daily so I think it’s ok in a pinch. I doubt this item can be purchased online since it must be kept refrigerated.
