When I think of fall, I inevitably think of the flavors and foods I can only get this time of year.
Changing leaves are beautiful, and I certainly love the cooler temperatures, but fall food?
Man, oh man…
I’m talking pumpkin, cinnamon, cloves, chai spice, maple syrup, and of course, APPLES!
We are blessed with 2 abundant apple trees right in our yard, so this time of year, there is no shortage of deliciously sweet-tart and totally organic (and free!) apples!
So I decided it would be appropriate to take our homegrown apples and our homegrown maple syrup and make a healthy, sweet, paleo no-bake treat!

Never was there a more allergy-friendly snack or dessert! These can be eaten in 2 or 3 bites, making them ideal for packing in school lunches or after school snacking or serving at an autumn gathering or harvest party.

Can I use sweetened shredded coconut from the grocery store?
No, your treats will be FAR too sweet! Also, the ingredients on sweetened coconut flakes are far from nourishing. Unsweetened, shredded coconut is the way to go here. (Save 10% on my favorite organic, unsweetened coconut flakes with my discount code NOURISHING.)
Do these no-bake treats taste coconutty?
Personally, I don’t think so. The maple, apple, and cinnamon flavors definitely shine here. Also, I use an expeller pressed coconut oil, which is flavorless and odorless. (Save 10% on my favorite expeller pressed coconut oil with my discount code NOURISHING.)
Can I make these keto no-bake treats?
You can! Please use Lakanto’s Maple Syrup — NOT a granulated keto sweetener. A liquid sweetener is required to help these treats stick together.
I don’t have maple syrup. What sweetener should I use?
A liquid sweetener is required for these no-bake treats to hold together. You can try an equal amount or slightly less of raw honey. However, my personal recommendation for a delicious, fall flavor sans maple syrup is coconut syrup. (Save 10% on my favorite coconut syrup with my code NOURISHING.)

These Maple Apple Cinnamon Paleo No-Bake Treats are totally gluten-free, grain-free, dairy-free, egg-free, refined sugar-free, peanut-free, and soy-free! Never was there a more allergy-friendly healthy fall snack or dessert! 5 ingredients, minimal prep, and no cooking!
Ingredients
- 2-1/2cupsunsweetened shredded coconut flakes
- 1small appleof a red variety cored and cubed, leave the skin on
- 1/4cuppure maple syrup
- 2tablespoonscoconut oil
- 1/2teaspoonground cinnamon
Instructions
In a high-speed blender or food processor, combine all the ingredients.
- Pulse or process on low-medium speed until it forms a dough that begins to fold in on itself.
Using a 1-tablespoon cookie dough scoop, scoop out balls of the dough and place them on a parchment-lined cookie sheet.
- Place the bites into the freezer for 10-15 minutes, until hard.
Store the bites in an airtight container in the fridge or freezer until ready to serve.

Is the coconut oil supposed to be cold, room temp, or melted? Thanks-I’m looking forward to trying these!
If you’re using a high-speed blender or food processor, it doesn’t matter. My coconut oil is most often room temp, not melted, and it works just fine for me every time. I wouldn’t use cold coconut oil though.
I have your ebook and love it. I love the nut based recipes, but not so much for the coconut ones. (I know I’m odd. ) 🙂 Is it possible to switch out nuts for the coconut in the recipes in equal proportions in recipes like this one and have a similar result?
I’m so glad to hear that, Melissa! If you swapped out the coconut for nuts, you might try pecans or walnuts or a mix for this recipe since those go so well with apples and maple syrup. Please let me know if you try it!
