When I found naturally dyed, keto-friendly sprinkles, my intuition was clear: MUST MAKE KETO FUNFETTI CAKE BATTER ICE CREAM.
And, let’s be honest: I wasn’t even looking for keto-friendly sprinkles when I was scrolling. But, when they popped up in my feed, it was like a colorful neon sign pointing me to figure out how to make a keto, paleo, dairy-free, refined sugar-free Funfetti Cake Batter Ice Cream.
This Keto Birthday Cake Ice Cream is so perfect for birthday parties and any celebrations that need a fun, colorful, yet healthy ice cream treat!
Is it “cake batter” or “funfetti” or “birthday cake”?
Honestly, I wasn’t sure of the difference.
Some “cake batter” ice creams don’t have sprinkles. And, “Funfetti” is actually the brand name of a Pillsbury cake mix (which you know I didn’t use for this Keto Funfetti Ice Cream!).
Obviously, “Funfetti” and “birthday cake” = sprinkles, but does “cake batter” also = sprinkles?
At many ice cream shops, cake batter ice cream does have sprinkles. However, just as many ice cream shops’ cake batter ice cream does NOT have sprinkles.
Here’s my determination:
Cake batter ice cream, with or without sprinkles, contains a small amount of cake mix, usually from a box. Funfetti ice cream contains sprinkles AND is a cake batter ice cream because it is usually made with Funfetti boxed cake mix. Birthday cake ice cream is synonymous with Funfetti.
My recipe for Paleo and Keto Funfetti Cake Batter Ice Cream (or Birthday Cake Ice Cream) has sprinkles, but is not made with any boxed cake mix.

Keto Cake Batter Ice Cream without Boxed Cake Mix
So, how did I get away with making a keto cake batter ice cream without using cake mix?
Because cashew flour is naturally sweet, it mimics the cake-y taste and texture of boxed cake mix, but keeps this cake batter ice cream totally grain-free, gluten-free, and paleo.
Paleo & Keto Funfetti Ice Cream with Naturally Dyed Sprinkles
These sprinkles, y’all. They’re so freaking fun.
With sprinkles on any dessert, how can you NOT smile?? Try not to smile. I dare you.
See? You can’t do it. Sprinkles just make people happy. They’re that little extra flourish that turns boring vanilla ice cream or boring white cake into something bright and special.
But… typical sprinkles are made with loads of artificial food coloring. Looking at them might make you extra happy, but I guarantee eating them doesn’t make our bodies happy.
So, here’s where you can find keto-friendly, naturally dyed sprinkles.
If you aren’t keto or don’t care if you eat a bit of sugar, here are less expensive, naturally dyed sprinkles.
How to Make Paleo & Keto Funfetti Birthday Cake Ice Cream
Ingredients:
- full fat coconut milk
- 4 egg yolks
- cashew flour (or almond flour if that’s what you have)
- keto sweetener of choice (I used my blend, Dietz Sweet.)
- vanilla extract
- naturally dyed sprinkles
Equipment:
- blender
- ice cream maker (<– This is the best ice cream maker I’ve ever used!!)
First, combine all the ingredients in a blender and blend until smooth and mixed.
Pour into your ice cream machine. Follow the manufacturer’s directions for using your ice cream maker. Again, I can’t say enough good things about my favorite ice cream machine.
When the ice cream is ready, add in the sprinkles. Mix well, transfer to a bowl or other storage container, and serve when ready!
Recipe FAQs & Subs
What other dairy-free milk can I use besides coconut milk?
For what it’s worth, this healthy funfetti ice cream does NOT taste coconut-y when it’s finished. The batter is a bit coconut-y, but the finished ice cream is not. If you must be coconut-free, use another high-fat, dairy-free milk, such as macadamia nut milk. If you tolerate dairy, you can use heavy whipping cream.
Can I omit the sprinkles?
Absolutely! Without the sprinkles, this is a healthy cake batter ice cream. So healthy, you could eat it for breakfast!
How to make this vegan?
Unfortunately, the egg yolks are necessary for a successful paleo funfetti ice cream. They add fat and creaminess that makes the texture and scoop-ability second to none. If you choose to omit the egg yolks for a vegan cake batter ice cream, I cannot guarantee optimal results.
Can I use almond flour instead of cashew flour?
Yes, but I do prefer the taste of cashew flour for this paleo cake batter ice cream. Cashew flour is naturally sweeter than almond flour. However, it is higher in carbs. So, for a super low-carb funfetti cake batter ice cream, you may prefer almond flour.
Can I make this nut-free?
You can leave the cashew (or almond) flour out if needed. However, this will affect the texture of the ice cream. You’ll have a paleo funfetti ice cream but not a cake batter ice cream.
I’m worried about eating raw egg yolks.
If your eggs come from a trusted source, you should be fine. I wouldn’t eat raw egg yolks from plain grocery store eggs. But, I don’t hesitate because my eggs come from my best friend who raises healthy, pastured, chickens. Please use your discretion.

Ingredients
- 2cansfull fat coconut milk
- 4egg yolks
- 1/2cupcashew flour
- 1/2cupDietz Sweetor your favorite granulated keto sweetener
- 1tablespoonvanilla extract
- 1/3cupnaturally dyed sprinkles
Instructions
Combine all ingredients in a blender and blend until smooth.
Pour the mix into your ice cream machine and churn according to the manufacturer's instructions.
When you can tell that the ice cream is almost done, add the sprinkles and mix well.
Serve immediately. Or, transfer to a storage container and freeze for about 15 minutes to harden.
To serve later, take the ice cream out of the freezer about 20 minutes before serving to allow it to soften.

Just leave it out. It won’t have the “cake batter” texture, but that’s really all the cashew flour does. It doesn’t change the taste.
