Anytime I make a green smoothie or green salad dressing or green anything, one of my kids or my husband will inevitably quote that line. And we all laugh because it’s sorta become a family inside joke.
So, of course, when I had the idea to make a dairy-free, egg-free, sugar-free ice cream out of avocados, what did they ask??
“I know it’s green, but what else is about it?” Gets me every time. 🙂
Well, let me tell you what else is about it…
Even though avocados and lemons are definitely the star ingredients, there’s one other addition that I think is magically delicious and nourishing: MCT oil.
We’ll get to this easy-peasy Keto Lemon Avocado Ice Cream recipe in a moment.
First, let’s talk shop about MCTs, ok?
MCT Oil, Ketones, & Ketosis
MCT = medium-chain triglycerides. They are healthy fats that bypass the digestive system and are processed directly by the liver. Because MCTs are so easily absorbed by the body, they are a quick and sustainable source of energy for both the brain and body.
Unlike other fatty acids (like polyunsaturated and monounsaturated fats), MCTs can be broken down into ketones.
Ketones are a byproduct of the body breaking down fat for energy when carbohydrate intake is low. This process is called ketosis.
For thousands of generations, people have likely been relying on ketones for energy when glucose wasn’t always available.
For example, our ancestors likely had frequent periods of time when food wasn’t immediately available — not to mention the fact that most high-calorie and more nutrient-dense foods would need to be prepared before being readily available to eat. Ketones have a useful effect on mental performance, in addition to to providing energy for exercise or just daily living.

Here’s how to make Keto Low-Carb Lemon Avocado Ice Cream with MCT Oil
It’s as simple as throwing all the ingredients into a blender (I adore my BlendTec and would grab it if my house was on fire), blending until smooth, then transferring to your ice cream maker.
Remember, y’all, I don’t do complicated. The blender batter method is a boss when it comes to ice cream, waffles, cornbread, creamy custards, and more!
Once you have a creamy-dreamy light green ice cream base, pour it into your ice cream maker and let ‘er go!

If making ice cream is a pain in the butt because of the mess, the salt, the churning and cranking, or just keeping up with all the parts and pieces of a traditional ice cream machine, then you need a new ice cream maker.

Can’t have coconut?
If you’re sensitive or allergic to coconut, you can still make this Low-carb Lemon Avocado Ice Cream! No need to miss out on this dreamy dessert (or breakfast, if you like) just because of the MCT oil.
Simply leave it out if coconut is an issue for you. Or, replace it with an equal amount of ghee.
I wouldn’t recommend adding more avocado, however, especially if you have picky eaters. The avocado flavor is definitely present in this ice cream, so you don’t really want to add more. But it is wonderful with the tartness of the lemon and sweetness of stevia!

Keto Lemon Avocado Ice Cream (with MCT oil!)
Keto Lemon Avocado Ice Cream is creamy-dreamy, super high fat, stevia-sweetened, and has a brain and body boost of MCT oil! It's also allergy-friendly: dairy-free, egg-free, nut-free, peanut-free, gluten-free, with a coconut-free option included!
Ingredients
- 3medium-sized avocados
- 1cuproom temp water
- 3/4cuplemon juice
- 2tablespoonsPerfect MCT Oil leave out if coconut-free
- 1/8 to 1/4teaspoonstevia*to taste
- 1/4cupsustainably sourced collagenI use Perfect Supplements Grass-Fed Collagen.
- 2teaspoonssustainably sourced gelatinI use Perfect Supplements Grass-Fed Gelatin.
- 2 to 4drops lemon essential oil
Instructions
- Add the avocado, water, lemon juice, MCT oil, stevia, and collagen to a blender.
- Blend until smooth.
- Taste and adjust the sweetness or add lemon essential oil if stronger lemon flavor is desired.
- Last, add the gelatin while the blender is running to incorporate it fully.
- Pour the mixture into your ice cream machine and process according to the manufacturer's instructions. I have this ice cream maker.
- Once churned, serve immediately like a soft-serve. Or transfer to the freezer to harden up for an hour.
- Store in the freezer.
- Remove from the freezer at least 1 hour before serving to soften.

*I use powdered stevia for this recipe. If you prefer to use a liquid extract, start with a dropperful and taste before adding more.
