Homemade ice cream is always special!

No matter how old they get, my kids’ eyes light up when I bust out the ice cream maker. They know what’s coming…

And, they know that their mom doesn’t make any ol’ sweets. This mom makes the most nourishing, nutrient-dense, and healthy desserts possible.

I try my best to limit the amount of sugar we consume. That’s why we eat keto desserts, even though we definitely don’t eat keto.

It’s not the actual sugar we crave, but the sweetness. And, I know how to accomplish sweet without sugar…

What You Need to Make Dairy-Free Keto Strawberry Ice Cream

This easy keto strawberry ice cream recipe has two stages:

#1 — The ice cream stage.

#2 — The strawberry swirl sauce stage. (Say that 5 times fast.)

The ice cream base for this dairy-free recipe is a Plain Jane Keto Vanilla Ice Cream. It’s simply full-fat canned coconut milk, Dietz Sweet, pastured egg yolks, vanilla, and a bit of salt.

If you were in the mood for plain vanilla ice cream without sugar and dairy, you could whip up this ice cream sans strawberry sauce in a jiffy.

The Strawberry Swirl Sauce is equally easy and can be made while the ice cream is churning. For the strawberry sauce, you will need frozen or fresh strawberries (or other berries of your choice), lemon juice, and Dietz Sweet.

Ok, let’s make a classic summer dessert… but dairy-free and keto-friendly!

How to Make Dairy-Free Keto Strawberry Ice Cream

Keto Vanilla Ice Cream Base:

2 cans full fat coconut milk
⅓ cup Dietz Sweet
4 pastured egg yolks
1 tablespoon vanilla extract
Generous pinch salt

In a saucepan, heat 1 can of the coconut milk with the Dietz Sweet until the sweetener is dissolved.

To a blender, add the other can of coconut milk, the egg yolks, vanilla extract, and salt. Then, add the coconut milk with dissolved sweetener and blend for 10 to 15 seconds.

Pour this ice cream base into your ice cream machine and churn according to the manufacturer’s instructions.

While the ice cream churns, make the Strawberry Swirl Sauce.

Strawberry Swirl Sauce:

1-½ cups fresh or frozen strawberries
Juice of 1 lemon
1-2 tablespoons Dietz Sweet

Add the ingredients to a small saucepan over medium-high heat. As the mixture heats up, use a wooden spoon to break and smash the berries, pounding them down.

Simmer for 20 minutes, stirring occasionally until the sauce reduces and thickens. Set the sauce in the fridge to cool.

This Strawberry Swirl Sauce can be used as a topping for pancakes, waffles, ice cream sundaes, cheesecake, or filling between cake layers!

When the ice cream is almost finished churning (you can tell by the sound of the machine’s motor), slowly drizzle in the cooled strawberry sauce and allow the ice cream machine to continue churning until the mixture is fully incorporated.

Serve immediately or transfer to a dish and set in the freezer to harden up for an hour before serving.

Recipe Substitutions & FAQs

I’m not dairy-free. Do I have to use coconut milk?

Absolutely not. You can use an equal amount of heavy whipping cream (preferably raw and grass-fed) in place of the coconut milk. The rest of the ingredients stay the same.

I can’t have coconut milk. Is there another dairy-free alternative?

Ice cream is the BEST when it’s creamy, right? The creaminess comes from fat — from the coconut milk or heavy cream and egg yolks. Dairy-free milks, such as oat milk and rice milk, just don’t have the fat content to create that creaminess. Macadamia nut milk might work, but I honestly think you’ll get the best results by using full fat coconut milk or heavy cream.

The leftover ice cream is rock hard. What do I do?

I’ll be honest: this ice cream is going to be ROCK HARD if you freeze it to save for later. Without the anti-freeze of commercial ice cream (yes, really), I don’t have a way to keep the ice cream from freezing solid.

This dairy-free keto strawberry ice cream is best when it’s straight out of the ice cream maker — as the Universe intended, I believe. It is also fine if you freeze it for an hour as soon as it’s made, before serving.

If you plan to make this in advance or save the leftovers, you will need to plan to take the ice cream out of the freezer and allow it to thaw on the counter for about an hour to soften.
