Pancakes have never been my favorite breakfast food…
(I know, I know. I’m nuts. Don’t tell too many people, mkay?)
I’m more of a bacon and eggs and biscuits and gravy kinda girl. That’s my kind of breakfast soul food.
Until now…
These Paleo Chocolate Chip Pancakes have forever changed my mind about pancakes for breakfast. And I will eat these puppies any day of the week, any time of day. Forever and ever. Amen.
Alas, this isn’t a Lindsey-original recipe. This one comes from Paleo cooking super lady Jennifer Robins, out of her newly released cookbook, The Paleo Kids Cookbook.
Jennifer is basically a one-stop shop for Paleo cooking. She blogs her mouth-watering recipes with gaw-geous photography at Predominantly Paleo. She’s also the best-selling author of Down South Paleo and The New Yiddish Kitchen.
The Paleo Kids Cookbook by Jennifer Robins
A couple of months ago, I received a review copy of The Paleo Kids Cookbook by Jennifer Robins.
Flipping through this beautifully photographed book, one thing really stood out to me:
This isn’t just a book filled with recipes kids will LOVE (like Green Eggs & Ham Roll Ups, Pale-O’s Cereal, Green Goblin Smoothie, and Animal Crackers to name a few.) It certainly is that. The Paleo Kids Cookbook is a true kids’ cookbook — every. single. one. of the 100 recipes contains instructions “for little hands”.
Jen gives us practical, doable ways to get our kids involved in cooking and eating these healthy recipes. And we all know that our best chances of getting our kids to try foods is to involve them in prep! No matter how young or old, there’s a recipe for your kids — one they WILL love to eat because they had fun helping to make it.
My second favorite thing about this book? The dedication.
Jennifer radiates such love and inclusion to all our kiddos who have ever felt left out at school or a birthday party because food allergies wouldn’t allow them to enjoy all the foods the other kids got to have. She writes:

Growing up, our special treat as kids was to get homemade chocolate chip pancakes on the weekends. Back then, gluten and dairy were of no consequence, so we enjoyed every last bite thoroughly. Fast forward to recent times when I wanted to recreate a childhood favorite of my own for my children, but needed a better way. When I make these, they scramble over the last one and have been known to get pretty competitive in doing so! Make a double batch I say!
I can attest to the truth in this. The first time I made these pancakes was for a late-night snack for The Hubs and me. And we (sort of jokingly) argued over the last one! They’re just. that. good.

Paleo Chocolate Chip Pancakes
Make these Paleo Chocolate Chip Pancakes part of your weekly breakfast rotation or meal prep. So easy to make, these paleo pancakes are grain-free, gluten-free, nut-free, and dairy-free!
Ingredients
- 2eggs
- 1/4cupcoconut flour
- 1/4cuptapioca starch (I used arrowroot flour, and it worked great!)
- 1/3cupcoconut milk, flax milk, or other dairy-free milk
- 1/2teaspoonbaking soda
- 1tablespooncoconut oil, melted
- 1tablespoonmaple syrup
- pinchsalt
- 1/2cupsoy- and dairy-free chocolate chipsWe use Lily's.
- extra coconut oilghee, or preferred fat for cooking
- coconut whipped creamoptional and on page 197 of The Paleo Kids Cookbook
Instructions
Preheat a griddle or large skillet over medium-high heat with about a tablespoon of oil.
- Combine all of the pancake ingredients in a bowl, except for the chocolate chips.
- Stir, whisk, or blend with a stick blender until the batter is smooth.
- Add in the chocolate chips and stir to combine.
- Spoon the pancake batter into the hot skillet, spacing the pancakes at least 2 inches (5 cm) apart.
- Cook the pancakes until they begin to bubble, about 2 to 3 minutes and then flip them to the alternate side for another few minutes.
- Remove the cooked pancakes from the skillet or griddle and serve them with coconut whipped cream and a few extra chocolate chips if desired.
- For Little Hands: All your child to help mix the pancake ingredients in a bowl. Older children may also help flip the pancake on the griddle while supervised.
