Super Simple, 5-Ingredient Paleo Breakfast Hash
I don’t care if you’re “Paleo” or not — this hash is dang tasty!
It’s loaded with plant fiber, greens, and nitrate-free sausage for protein.
I love to make this hash on Sunday afternoons when I’m doing some prep for the upcoming week’s meals. I can portion out what I want for breakfast Monday through Friday, and simply warm it in a skillet for a quick and easy breakfast for Momma!
Although my family devours this Paleo Breakfast Hash too, I reserve it for myself since I’m not eating dairy or eggs or grains currently. For the kiddos, I’ll make quiche, soak oats for oatmeal, or do a double batch of my grain-free waffles. But, for me? It’s this hash, for the win!

Super Simple, 5-Ingredient Paleo Breakfast Hash
If you're looking for an egg-free, dairy-free, grain-free, Whole30-friendly, plant- and protein-filled breakfast, you've landed on the right recipe! This Super Simple, 5-Ingredient Paleo Breakfast Hash is where nourishment meets simplicity!
Ingredients
- 2 to 3tablespoonscoconut oillard, tallow, or avocado oil
- 1poundnitrate-freesugar-free ground breakfast sausage
- 4 to 5cupssweet potatoesabout 2 large peeled and cubed potatoes
- 1cupdiced onion
- 1cupdiced sweet peppers
- 1bunch kaletorn from stems and roughly chopped
- salt and pepper to taste
- other spices such as garlic powder or turmericalso to taste (optional)
Instructions
- Melt fat of choice in a large cast iron skillet or cast iron Dutch oven (what I use).
- Add the diced sweet potatoes.
- To another, smaller skillet, brown the sausage.
- While browning the sausage and stirring the sweet potatoes occasionally, dice the onions and peppers.
- Once the sausage is browned, remove it from the heat and set aside.
- After the potatoes have been cooking for approximately 15 minutes, add the diced onions and peppers to the skillet or Dutch oven.
- Stir to combine, add salt, pepper, and other seasonings (if using). Place a lid on the skillet or Dutch oven, then give the hash a stir every few minutes to keep it from sticking.
- When the potatoes are soft, add the browned sausage.
- Stir it all together, then add the kale last.
- The kale only needs about a minute to soften.
- Finally, serve!
Recipe Notes
I make this hash in stages, chopping and sauteeing at the same time so it finishes up in less than 30 minutes. It's a pretty great recipe for multi-tasking!
