I’d been wanting to use my favorite Matchinga powder in baking for so long. And then, I had the idea to make green donuts!

I hesitate to use the word “earthy” when describing a dessert. I feel like people — me included — associate the word “earthy” with dirt.
These keto baked donuts definitely do not taste like dirt! 😛 Yet, they do taste earthy — in a really good way. It’s a light, spring-y sort of flavor — slightly grassy, but also, in a GOOD way.

How To Make Keto Matcha-Moringa Baked Donuts
8 ingredients, y’all. That’s it. And suuuuuuper simple.
When I’m working with coconut oil, I find it helpful for all of my other ingredients to be at room temperature. Otherwise, if they’re cold, it re-solidifies the coconut oil, which makes for a donut batter that doesn’t cook properly because the fat isn’t evenly distributed.
So, first, you want to start with all your ingredients at room temp.
The rest is very simple:
Combine, the coconut flour, Matchinga, granulated sweetener of choice, baking soda and baking powder in a medium-size mixing bowl or the bowl of your stand mixer. Whisk the dry ingredients together.
Then add room temperature eggs and melted or softened coconut oil and blend until a nice, smooth batter forms.
For beautiful donuts, scoop the batter into a gallon-size zip-top bag with a 1/2″ hole cut in one corner and pipe the batter into the donut wells, filling each well half-way. (I have this donut pan.)
Bake at 350 degrees for 13 to 15 minutes, or until the donuts have risen and look cake-y. It’s hard to tell by color on these donuts because they’re so green! But, you want the green to be nice and bright, not browned.
Once the donuts are baked and cooled, melt 1/2 cup of keto-friendly chocolate chips (Lily’s brand is my favorite) with a bit of coconut oil. Dip the top of each donut in the melted chocolate glaze and set aside to harden.
You can also sprinkle the donuts with some extra Matchinga powder for more green goodness! Just a note: after the donuts sit for a while, the Matchinga will absorb into the glaze. So that pretty, green powdery finish doesn’t last long. 🙁 But it sure is fun!

Keto Matcha-Moringa Baked Donuts (nut-free, dairy-free, paleo)

Ingredients
Matcha-Moringa Donuts
- 1/2cupcoconut flour
- 1/4cupPerfect Matchinga or 1/8 cup moringa + 1/8 cup matcha powder
- 1/2cupLakanto White or Dietz Sweet or your favorite whole granulated sweetener, such as coconut sugar
- 1/2teaspoonbaking soda
- 1/2 teaspoonbaking powder
- 6eggsroom temperature
- 1/2cupcoconut oil, melted or softened
Quick Keto Chocolate Glaze
- 1/2cupLily's chocolate chipsor your favorite paleo chocolate chips
- 1 tbsp + 1 teaspooncoconut oil
Instructions
Combine the coconut flour, Matchina powder, sweetener of choice, baking soda, and baking powder in a medium mixing bowl or bowl of your stand mixer.
Whisk to combine.
Add the eggs and softened or melted coconut oil and mix until a smooth batter forms.
Transfer the donut batter to a gallon-size zip-top bag with a 1/2" hole cut in one corner.
Pipe the donut batter into the wells of your donut pan, filling each well about half-full.
Bake 12 to 15 minutes. Do not overbake. The donuts should still be green, not browned.
Transfer to a cooling rack.
Once cool, melt the chocolate chips and coconut oil and whisk until smooth.
Dip the top half of each donut into the chocolate glaze and set aside for the glaze to set.
Sprinkle each donut with more Matchinga powder, if desired.
What is the oven temp for baking the donuts?

Can I make them vegan by switching eggs to flaxseed eggs? how many in cups?
Lu, I’m honestly not sure. I haven’t tried it, so I can’t say how the flax egg sub would work. My guess is that the result would not be as good as the original version.
Of course my only issue is i have only little bit left of my Matchinga!! Been drinking to many of your machinga hot cocoas!! Time to order some more i guess!

How would you recommend doing these for one who does not have a doughnut pan? Could it be baked like a cake instead?
Sure, you could bake it like a cake, or cupcakes if you have a muffin tin. I think a 9″ round cake tin would work best, but of course, I haven’t tried it as a cake, so I’m not sure. Experiment and let me know what works!
Would it be alright to use all matcha instead of the moringa combo? I understand it’ll change the nutritional benefits but for the sake of using what I have.
