You guys, I loooooove stuff I can make in mere minutes and with just a few ingredients.
Isn’t that the epitome of my motto — I don’t do complicated? What’s less complicated than a no-bake treat with only 5 ingredients that takes less than 10 minutes to prepare?
These Sprouted Seed Truffles are simple and special. They’re perfect for packing in a lunchbox or after-school snacking or a quick snack pre- or post-workout.
Perhaps you noticed they’re called “sprouted seed truffles”…
Why Sprouted Seeds?
All seeds — grains, nuts, beans, and seeds we eat — contain an anti-nutrient called phytic acid. Phytic acid is great for the seed because it essentially keeps all the minerals that the seed needs to grow into a healthy plant inside the seed.
Phytic acid is not, however, great for humans. Our bodies don’t digest phytic acid. And, if the phytic acid hasn’t been neutralized first, our bodies will also not receive the minerals from the seed.
So, basically, if you’re eating a diet full of grains, beans, nuts, and seeds — but you’re not neutralizing the phytic acid first — your body isn’t digesting the food or absorbing the nutrition in those foods efficiently at all.
How to overcome this?
It’s actually very simple! The seed (grain, nut, bean, seed) needs to be soaked or sprouted or fermented before consuming.
Yes, this is an extra step. Yes, it takes more time (not usually a lot of extra hands-on time… more like waiting time). 🙂
Yet, it’s so worth it to make sure you and your family are getting the most out of your foods and not wrecking your digestion in the process.
Many grains, nuts, beans, and seeds can be sprouted at home using simple equipment: a glass jar, a sprouting screen, and water.
My friend Megan at EatBeautiful.net has a fantastic post about different types of seeds and phytic acid, plus how to soak/sprout them!
The seeds in these Sprouted Seed Truffles, however, are more difficult to sprout at home. Plus, sprouting requires the extra step of dehydrating those seeds in order to make anything with them.
If you feel like sprouting your own flax and sesame seeds for these paleo and vegan truffles, go for it!
Or, if you’re not in a do-everything-yourself phase of life, you can, thankfully, purchase pre-sprouted seeds!
Sprouted Seed Truffles (aka no-bake protein balls)
For these 5-ingredient truffles, I actually used sprouted and ground flax seeds. I measured it just like flour; it was soooo easy!
Once your seeds are ground up, all that’s left is to stir in some sprouted tahini (yes, there’s phytic acid in unsprouted nut butters, too!) or almond butter, a minimal amount of maple syrup, and some fermented raw cacao powder.
(Yep, cacao contains phytic acid too, so fermenting cacao breaks it down and makes it more digestible too!) I like to know that my cacao is actually fermented, so I only use fermented raw cacao powder from Wildly Organic. 🙂
Since I’m not in the sprout-and-make-my-own-nut-butters time of life, I buy already sprouted or soaked/dehydrated nut and seed butters.
Here is a sprouted tahini. Use tahini in this recipe if you are sensitive or allergic to nuts or avoiding them.
Here is the soaked/dehydrated almond butter we use. If you tolerate nuts, this is a great option!
Can these be made keto/low-carb/sugar-free/THM?
These truffles contain 1/3 cup of maple syrup, which divides out to less than 1 teaspoon of syrup per truffle.
To make these keto, low-carb, sugar-free, and Trim Healthy Mama-friendly, you can use Lakanto Maple Syrup, which is made with monkfruit and stevia.

Got 10 minutes? Make these 5-Ingredient Sprouted Seed Truffles with sprouted flax and sesame seeds! They're vegan and paleo, lightly sweetened with maple syrup, and perfect for school lunches or after-school snacks! High protein, refined sugar-free, and no-bake protein balls!
- Stir in tahini (or almond butter), maple syrup, 1 tablespoon cacao, and salt.
- Mix until combined.
- Form into 1-tablespoon sized balls. I use a tablespoon cookie dough scoop.
- Roll each ball in the remaining 1 tablespoon cacao powder.
- Refrigerate until ready to serve.
- Store in the fridge up to 2 weeks.
