Like, I’m seriously impressed with myself — because sometimes paleo and keto baked goods are difficult to get right. (Although, I’ve gotten it “right” with several of my baked recipes likemy Keto Maple Carrot Cake, Keto Coconut Flour Lemon Poppyseed Bundt Cake, and Keto Chocolate Coconut Donuts!)
Cookies are especially hard for me because I often find the finished product too crumbly or too crispy. I love a soft, chewy cookie — and these keto dark and white chocolate hazelnut cookies deliver big time!
My inspiration for these low-carb cookies came from a recent Azure Standard purchase.
I found Lily’s WHITE chocolate chips at Azure Standard (how did I not know these existed?!). Although my family wanted to snack on them straight from the bag, I did not allow it.
“I don’t know what these are for yet, but I’m going to create a recipe with them. Stay out!” I warned my family.
Then, a wave of creative inspiration hit me and these fan-freaking-tastic Keto Chocolate Hazelnut Cookies are the result.
I just love the combination of white and dark chocolate mixed with the occasional crunch of hazelnuts. They’re so special and delicious!
Let’s talk keto white chocolate chips!
I’ve been a hardcore Lily’s chocolate fan for many years, but I had no clue Lily’s came out with keto-friendly WHITE chocolate chips.
I’m so impressed with the ingredients of these keto white chocolate chips. (Psssst! Sorry, dairy-free folks; these chips DO contain milk.)
The rich and creamy white chocolate flavor is SO much better than sugar-y white chocolate chips. Our family are fans!

Here’s what you’ll need to make these dark chocolate and white chocolate hazelnut cookies:
- almond flour

- cacao butter (optional, but recommended!)
- eggs
- Lily’s White Chocolate Chips
- Lily’s Dark Chocolate Chips

- salt, baking soda, vanilla
How to Make Keto Chocolate Hazelnut Cookies
This is a pretty straightforward cookie recipe…
Cream together fat and sweetener. Add eggs. Add flour. Then, add salt, baking soda, and vanilla.
And last — add what makes these keto cookies shine! — the dark chocolate chips, white chocolate chips, and chopped hazelnuts.
I normally make smaller cookies using a 1-tablespoon cookie dough scoop, but I opted for BIG keto cookies this time. Using the same dough scoop, I made each cookie double-sized.
It worked well to scoop 2 balls of dough into my hand, then form the 2 scoops into 1 large dough ball.
This recipe made 10 large cookies. If you prefer 1-tablespoon cookies, the recipe makes 20.
Ingredient Substitutions & Recipe FAQs
Do I have to use cacao butter?
No, if you prefer not to use cacao butter, you can use palm shortening for all of the fat in the recipe (5 tablespoons). I highly recommend the cacao butter though; It adds even more white chocolate flavor to these cookies!
What can I sub for almond flour?
I have used cashew flour successfully. Unfortunately, I don’t have another sub for nut flours if you don’t tolerate nuts.
Can these be made vegan/egg-free?
I have not tried the recipe with egg substitutes (like flax or chia eggs). If you do, please let me know how it works!
Why soaked and dehydrated hazelnuts? Can I use regular hazelnuts instead?
Nuts contain an anti-nutrient called phytic acid which interferes with our bodies’ absorption of minerals. Soaking and dehydrating nuts reduces phytic acid. Substitutions for hazelnuts?
This keto cookie recipe would be delightful with chopped pecans or pistachios if you don’t have hazelnuts. The extra crunch of the added nuts is really special!
Are these keto chocolate hazelnut cookies dairy-free?
No, because the Lily’s white chocolate chips aren’t dairy-free. If you must be dairy-free, omit the white chocolate chips and use all Lily’s dark chocolate chips, which are dairy-free.

Keto Chocolate Hazelnut Cookies
Ingredients
- 3tablespoonsmelted cacao butter(if not using cacao butter, sub an additional 3 tablespoons palm shortening)
- 2tablespoonspalm shortening*
- 6tablespoonsDietz Sweetor your preferred granulated, keto-friendly sweetener
- 2eggsroom temperature
- 1-1/2cupsuperfine almond flour
- 2tablespoonscoconut flour
- 3/4teaspoonsalt
- 1/2teaspoonbaking soda
- 2teaspoonsvanilla
- 1/3cupLily's dark chocolate chips
- 1/3cupLily's white chocolate chips
- 1/3cuphazelnutsroughly chopped
Instructions
Preheat oven to 350 degrees and line a baking sheet with parchment paper
In a stand mixer, cream together the palm shortening, melted cacao butter (if using), and sweetener.
Add the eggs and mix until incorporated.
Next, add the almond flour, coconut flour, salt, baking soda, and vanilla.
When a dough has formed, mix in the chocolate chips and chopped hazelnuts.
Make 2-tablespoon dough balls (the recipe will make 10 dough balls of this size or 20 1-tablespoon dough balls if you prefer smaller cookies).
Baking for 20-22 minutes or until the tops and edges have begun to get golden brown.
Remove from the oven and allow to cool for a few minutes before eating. Store in an airtight container at room temperature.

Could I substitute coconut oil in place of the palm shortening?
Coconut oil doesn’t work as well as palm shortening in my experience with cookies. You’re welcome to give it a try, though!
