Best Keto Fudgy Brownies {with a secret!}
These brownies tick all the brownie boxes:
- deeply chocolate-y
- moist
- definitely fudgy
- milk is a necessity (or dairy-free milk!)
And then they tick a few more boxes…
- grain-free, gluten-free, dairy-free, and sugar-free
- keto/low-carb/high-fat
- loaded with fiber and veggies
What?! Veggies?! Oh, you didn’t want vegetables in your brownies??
I get it, but will you please trust me? Remember, I have a husband and teenagers, and I don’t get to live in Crunchy Granola-ville all the time.
Like, I actually do have to make things they’ll eat! And boy, did they ever eat these nourishing Keto Fudgy Brownies!

FAQs About Cauliflower “Cream”
I don’t have/don’t want to use an Instant Pot. How should I make the cauliflower “cream”?
You do not need an Instant Pot (though I highly recommend the IP anyway because it’s just a freaking fantastic gadget!) to make cauliflower “cream”. You can boil the cauliflower in the same amount of water on the stove until fork-tender. Then, blend and add to the brownies.
Will I taste the cauliflower?
Ok, if you’re a brownie batter bowl-licker like we are, you *might* taste some cauliflower, ahem, essence in the batter. Also, you may smell some cauliflower smells when you take the brownies out of the oven. Let them cool, as recommended in the recipe. Magical things, like disappearing cauliflower taste/smell, happen during cooling!
What can I sub for the cauliflower “cream”?
I haven’t tested the recipe with anything other than cauliflower, so I can’t say for sure what might work in its place. Also, other purees that would normally be used in baking, like applesauce or pumpkin, add too many carbs to keep these Keto Fudgy Brownies keto.
So, if staying low-carb doesn’t matter to you, feel free to try an equal amount of applesauce. I think banana or pumpkin would change the flavor too much, but if you like that sort of thing, don’t let me tell you what’s best for your brownies. I’ll do me and let you do you, ok? 😉
Best Keto Fudgy Brownies {with a secret!}
These nourishing brownies are everything you want in a brownie and MORE! Dairy-free, grain-free, and sugar-free, these are the BEST Keto Fudgy Brownies ever... and they have a secret veggie ingredient that makes them super healthy, moist, and so yummy!
Ingredients
- 1cupCauliflower "Cream"
- 3/4cupraw cacao powder
- 2pastured eggs
- 1/2cup+ 2 tablespoons Dietz Sweetor coconut sugar, if whole sweetener is preferred, not keto
- 3tablespoonscoconut flour
- 3tablespoonscoconut oilmelted
- 1/2teaspoonsalt
- 1/2teaspoonbaking soda
Instructions
For The Cauliflower "Cream":
- Place 1 pound of frozen cauliflower into the stainless steel insert of your Instant Pot. Add 1/2 cup water.
- Put the lid on the pot, seal the vent, and press the "Manual" button. Adjust the time to 2 minutes, high pressure. When it beeps, immediately release the pressure.
- Blend or puree the cauliflower. And that's cauliflower cream!
For The Best Keto Fudgy Brownies:
- Preheat your oven to 350 degrees Fahrenheit, then grease an 8"x8" glass baking dish and line it with unbleached parchment paper.
- In a mixing bowl, combine 1 cup of Cauliflower "Cream" and the remaining ingredients.
- Mix until a smooth batter forms.
- Pour into the prepared baking dish and spread it evenly in the dish.
- Bake for 22-25 minutes, or until a toothpick inserted comes out clean.
- Remove from the oven and set on a cooling rack.
- It's best to wait at least 20 minutes before cutting into these brownies.
- Stores for 24 hours at room temperature, or store, covered, in the fridge.
