I have an irrational fear of unfamiliar cuts of meat. And there they were: the short ribs, lying in a brick of frost, staring back at me, daring me to grab them and attempt something.
When in doubt, I always turn to big, bold flavors. Rifling through the fridge, I came across familiar faces: soy sauce, sriracha, ginger, garlic…
“I got this,” I thought to myself. “I’ll show those short ribs who’s boss.”
And I did.

Asian Fusion Instant Pot Short Ribs

Asian Fusion Instant Pot Short Ribs come out tender and falling off the bone with a slightly sweet-spicy flavor! Perfect for Paleo and grain-free lifestyles with a keto option to keep it low-carb, too!
Ingredients
- 2tablespoonslardtallow, or other healthy fat of choice
- 10 to 12large short ribs
- 1/2cuptamari soy sauceor coconut aminos
- 1/4cupfresh ginger rootdiced
- 6ouncestomato paste
- 1/2cupbone broth
- 4clovesgarliccrushed
- 1/4cupraw honey or Dietz Sweet for low-carb/keto
- 2tablespoonssauerkraut juiceor apple cider vinegar
- 1teaspoonsriracha sauce
- 2tablespoonsarrowroot + 1/2 cup wateroptional, for thickening
Instructions
- Press the Saute button on the Instant Pot. Add the lard or other fat and melt. Working in batches of 2 or 3 ribs at a time, sear each rib on both sides -- about 2 minutes per side.
- Remove seared short ribs to a plate and set aside.
- In a mixing bowl, combine the remaining ingredients and whisk well.
- Using the whisk, scrape up the bits of meat and fat from the bottom of the Instant Pot. Then pour in the sauce and mix together.
- Place the seared ribs back into the Instant Pot and submerge them as best as you can in the sauce.
- Change the setting on the Instant Pot to the Meat/Stew setting, place the lid on, seal the vent, and set the timer to 30 minutes.
- When finished, release the pressure and remove the lid.
- With tongs, remove the ribs from the pot and set on a platter or large plate.
- If you desire to thicken the sauce whisk in arrowroot + water. Otherwise, transfer the sauce to a gravy boat or bowl with a ladle for serving over the ribs.
Serving Suggestions:
I made my Smokey Turmeric Cauli-Rice with veggies, placed a rib on top, and covered with sauce and chopped cilantro. Heaven!
Any sauteed or roasted veggies, baked sweet potatoes, or spiralized zucchini or squash will work with this dish, provided you keep it low-carb if you need to. It’s got enough flavor to carry the whole meal, especially if you mix everything together on your plate!
If you’re not avoiding grains or staying keto, a simple side of Instant Pot Sprouted Brown Rice or Fluffy Soaked Quinoa In The Instant Pot would be DIVINE!
