Ultraviolet Lemonade {stevia-sweetened!}
When I used the wild violets from my yard to create my signature cocktail — The Ultraviolet — I never imagined I’d have another use for those little flowers.
Yet, they have appeared in my yard once again…
And wild violets don’t last long, so…
We’re gathering them while we can and creating other fun drinks — like Ultraviolet Lemonade! This is a non-alcoholic way to enjoy wild violets!
Rather than making a simple syrup with water and sugar, like I did last year, I’m leaving the sugar out completely!
Ultraviolet Lemonade is low-carb, low-glycemic, and sugar-free, thanks to our good friend Stevia!
You don’t need the sugar or food coloring to capture the taste and color of wild violets!
So, let’s bottle up summer!

Stevia-Sweetened Ultraviolet Lemonade
Wild violets don't last long, so gather them while you can and create this fun, seasonal drink that's sweetened only with stevia!
Ingredients
- 1cupfresh wild violets
- 1cupboiling water
- 1cuporganic lemon juicefresh or bottled
- 6cupsfiltered water
- 1/2teaspoonstevia extract powder
Instructions
- Take off your shoes, go outside, and pick wild violets. 😉
- Place them in a glass jar.
- When you've got about a cup of petals (not leaves or stems), pour 1 cup of boiling water over the flowers.
- Let it steep for several hours or overnight.
- Strain into a pitcher.
- Add the lemon juice and 6 cups of additional filtered water.
- Then stir in the stevia.
- Serve over ice and garnish with extra violets.
- Or, make violet ice cubes!
