Especially if your favorite Girl Scout cookie happens to be the Samoas/Caramel deLites. These Cacao Coconut No-Bake Cookies are the perfect Samoas copycat. They take everything you love about the original but with a healthier twist.
Samoas Copycat Cookies Ingredients
This Samoas copycat recipe is incredibly easy to make and only calls for four ingredients. The base of the cookie is made by simply blending toasted coconut with Medjool dates to form the dough. Then, once shaped, the cookies get dipped in a mixture of coconut oil and Cacao Bliss.
Using Cacao Bliss in this recipe instead of plain cacao powder gives the cookies a more interesting flavor thanks to the subtle turmeric, black pepper, and cinnamon. If you don’t have Cacao Bliss, you can use regular cacao powder in its place. But I highly recommend giving Cacao Bliss a try. You can also use grass-fed butter in place of the coconut oil, if preferred.
While it’s fun to create the little donut shapes with these cookies to truly mimic the originals, it is completely optional. Feel free to just leave them in a round shape similar to a macaroon.

Cacao Coconut No-Bake Cookies
An easy, healthy no-bake cookie inspired by the Girl Scouts Samoas using just 4 simple ingredients!
Ingredients
- 1cupunsweetened shredded coconut
- 1cuppitted Medjool dates
- 1 1/2tablespoonscoconut oil
- 1/2cupCacao Bliss
Instructions
Preheat the oven to 400°F. Spread the shredded coconut onto a baking sheet lined with parchment paper. Toast in the oven for 5-10 minutes, until the coconut is a light golden brown color.
Add toasted coconut and dates into a food processor. Pulse until mixture combines and a dough forms.
Roll dough by the tablespoon into balls, then shape into round cookies. Place cookies on a parchment-lined baking sheet. Once finished with all the dough, place the cookie sheet in the freezer for 10 minutes to harden.
Melt coconut oil, then add Cacao Bliss, whisking to combine. Dip each hardened cooking in the cacao mixture and place back on a parchment-lined baking sheet. Drizzle remaining cacao mixture over the top.
Return cookies to the freezer for 10 minutes to set. Store cookies in a sealed container in the fridge for 1 week.
