Ooey Gooey Allergy-Friendly Brownies {grain-free, gluten-free, nut-free, dairy-free, egg-free, bean-free}
My IgG/IgA results for food sensitivities came back 6 weeks ago…
It wasn’t pretty.
I had extremely high antibodies for all dairy, chicken eggs, duck eggs, goat milk, almonds, chicken, and turkey.
(Basically, all my favorite foods.) 🙁
My naturopath wanted me to cut all those foods out of my life right away, so we could see if removing them helped some mysterious inflammation issues that haven’t resolved with other measures.

So, you can imagine that no dairy, no eggs, and no almonds has severely thrown off my dessert-making game. Like, big time.
But gosh darn it, I wanted some brownies. And where there’s a will, there’s a way, right?

It took some experimenting, but I’m pretty pleased with what I came up with.
These ooey gooey allergy-friendly brownies are pretty much everything-free. I use gut-friendly cassava flour with a tiny bit of coconut flour.
Can’t have coconut flour? Yeah, I thought of that too. 🙂
Unlike most grain-free, nut-free brownie recipes, this one is NOT made with beans. Don’t get me wrong, I love a good black bean brownie, but I also recognize that gut-healing diets don’t allow black beans. And no one should have to live without brownies. Not on my watch!
Cassava flour is a prebiotic flour that helps to feed the probiotics in your gut. Chia seeds and applesauce are fiber-rich ingredients that take the place of eggs and make these brownies easily digestible.
I love raw cacao powder for all the antioxidants and minerals it offers, and I only use fermented raw cacao from Wildly Organic (formerly Wilderness Family Naturals). Fermented cacao is much lower in phytic acid than non-fermented and much easier to digest.
All in all, I’m so pleased with these nourishing brownies. To have none of the traditional brownie ingredients (except raw cacao powder) and still taste moist and fudgy? That’s quite an accomplishment!
(And yes, this is technically a vegan recipe — but y’all know I’m not going vegan, right?) 😉
Ooey Gooey Allergy-Friendly Brownies

Ingredients
- 2tablespoonsground chia seeds
- 6tablespoonswarm filtered water
- 1/2cupcoconut oilmelted (use avocado oil if sensitive to coconut)
- 3/4cupmaple syrup or Dietz Sweet if you need sugar-free
- 1/2cupfermented raw cacao powder
- 1/2cupcassava flour no substitutions
- 1tablespooncoconut flouruse 2 tablespoons more cassava flour if sensitive to coconut
- 2teaspoonsvanilla extract
- 1/4teaspoonsalt
- 1/4teaspoongrain-free baking powder
Instructions
- Preheat oven to 325 degrees F.
- Grease an 8" x 8" glass baking dish.
- In a large mixing bowl, whisk together ground chia seeds and water.
- Whisk in the remaining ingredients, in the order listed, until smooth.
- Pour into the greased baking dish.
- Bake 30 to 35 minutes.
- Cool completely before slicing and eating.
- I think these brownies are best after sitting overnight!
Fantastic! Forgot vanilla both times I’ve made them and they are delicious. My family liked them still warm from the oven and the day after.
For the this seeds… I have regular chia seeds. I’ve never used ground. Can I just put some in a blender or mini food processor and grind them up?
Yep! That’s what I do, too!
I see one problem. There was no applesauce listed in the ingredients. How much is called for?
That’s a mistake on my part, Beverly! Thanks for catching it! In my original test of the recipe, I tried applesauce, but then I wanted to experiment with chia seeds. I forgot to remove applesauce from the text. 🙂
Mine turned out very dry and at all gooey. I love ooey, gooey brownies. I used Just Like Sugar sugar substitute because I have systemic Candida. I even added the v extra liquid they suggest when subbing for liquid sweetener. I also baked it in a silicone pan, since I don’t have an 8×8 glass pan. Any suggestions?
I’m not sure about that sweetener blend because I’ve never used it. But the recipe calls for a liquid sweetener – maple syrup. So, without that moisture, I’m not surprised that your brownies didn’t turn out gooey. Moisture makes them gooey, and a dry sweetener such as the one you used would absorb more moisture.
I made these today. I’m vegan, so I was very excited to see brownies!! Because I’ve only been vegan 2 years, ( certain things I remember, like chocolate brownies in the box, are nothing but processed yuck. ) These are quite different, they do taste better cooled down. The texture is spot on. They taste great with a glass of coconut milk. So, all in all. I’m happy with the outcome. Well done!
These brownies look delicious! Well done for developing a recipe that’s free from so many allergens. I have never used cassava flour before in baking, but I’m really intrigued by it now.
