Magically Healthy Real Food Unicorn Frap {Sugar-Free & Low-Carb!}
In case you missed it…
Starbucks released their latest Frappuccino® yesterday — the Unicorn Frappuccino®.
And my unicorn-obsessed daughter took notice.
Honestly, I can’t blame her. How could someone who eats, sleeps, and breathes unicorns, who actually believes they exist, who wears t-shirts in their honor NOT notice a swirly, colorful, frozen confection???
Before cutting sugars completely out of our lives, I might have given in and taken her to get a small one — just as a treat. And there’s definitely NOTHING wrong with occasional treats!
Except there’s just 2 problems:
- We don’t live within 65 miles of a Starbucks, so it’s a bit inconvenient.
- And, through DNA testing, I recently found out that I am at very high risk for developing Type 2 diabetes. 50% of my kids’ DNA comes from me, therefore, chances are pretty good that a diabetes risk may also be in their futures.
What’s a momma to do when she feels torn between wanting to treat her unicorn lover to a magical unicorn drink but doesn’t want to give that child 59 grams of sugar in a cup? (Nutrition facts and ingredients for Starbucks’ drink here.)
Well, this momma makes her own!
My daughter and I worked together to create a colorful, swirly, slightly sweet and magically healthy unicorn frap — complete with whipped cream and sprinkles!
Her favorite colors are pink and purple, so that’s what we went with. (I wasn’t aware that this Unicorn Frappu-cleano existed when I created ours. So if you must have a blue swirl, this is the one for you!)
Magically Healthy Unicorn Frap
First, you'll create a deep purple swirl. Next comes the bubblegum pink shake. And finally, top it off with some sugar-free, stevia-sweetened coconut whipped cream and special sprinkles if you like!
Ingredients
- 6ouncesfresh blackberries
- 1/2cuppure cranberry juice
- 1-1/3cupfull fat coconut milk
- 1/2cupwater
- 1cupfrozen strawberries
- 2" piece of peeled beet root

- 1/32teaspoonstevia extract
- 1cupice
- fat from another can of chilled coconut milk
- 1/32teaspoonstevia extract
- 1/2teaspoonvanilla
- 2teaspoonsfreeze-dried blueberry powderoptional
- 2teaspoons"Dietz Sweet"optional
Instructions
- Add the blackberries and cranberry juice to a high-speed blender and process until completely smooth.
- Transfer to a squeeze bottle or condiment bottle and set aside.
- No need to wash the blender!
- Now, add the 1-1/3 cup coconut milk, water, frozen strawberries, beet root, 1/32 teaspoon stevia extract, collagen, and ice to the blender.
- Blend until smooth.
- Set aside.
- Finally, spoon the fat from a can of chilled coconut milk into a medium bowl or bowl of a stand mixer fitted with the whisk attachment.
- Make sure not to get the liquid at the bottom -- you can save it for another smoothie later!
- Using hand beaters or the stand mixer, whip the coconut cream until it's light and fluffy.
- Add the other 1/32 teaspoon of stevia and vanilla, mix until combined, and set aside.
- Last, if you'd like to make sprinkles, mix together freeze-dried blueberry powder and Dietz Sweet.
Assemble Your Real Food Unicorn Frap
- Drizzle the blackberrry-cranberry swirl into a pretty glass.
- Gently fill the glass with the strawberry-beet smoothie.
- Spoon or pipe coconut whipped cream on top.
- And finish with blueberry sprinkles!
- Now you can whip up this healthy unicorn frap ANYTIME for all the unicorn lovers in your house!

Do you know the total amount of carbs in it?
Yes! I calculated it for a Trim Healthy Mama friend of mine just the other day! One serving contains 5.58g net carbs. 🙂
What is the 1/32 teaspoon for stevia extract measurement? Not familiar with that, is it 2 or 3 drops of liquid stevia?
Denyse, I use a powdered stevia extract, so 1/32 teaspoon is also called a “doonk”. I believe the liquid measurement is the same, but I’m not certain.
Why the beet root? Can you leave it out?
Beet root is excellent for liver support, especially during the spring! It also adds to the bright pink color of the frap. You can leave it out if you like, but I promise you cannot taste the small amount in the recipe!
A MUCH more acceptable option to the Starbucks Frapp! Total marketing by them with all the blue and pink colors…what kid WOULDN’T want to order one? Sheesh! Totally making this for my kiddos!

These are so pretty! I hardly ever have Starbucks’ frozen/latte drinks anymore and when I do (as a treat), I always have to modify it to have the least possible sweetener. Even then, I wouldn’t want all those food dyes. I’m also hearing feedback that their unicorn fraps taste sour even though there are 59 grams of sugar in it. What?! I’d take your beautiful homemade version any day!

Looks SO good! You and your sweet Unicorn-lovin’ daughter are very creative and wow..who wouldn’t want this one over ‘that one’… There’s a Starbucks every few feet here… and I rarely go in.. as it’s always $$ and filled with sugar. Will pin and try this one with my niece!
