How To Powder Your Own Parmesan & Toss The Green Can Stuff!
Name any Italian food that’s not made better with the addition of real Parmesan cheese…
See? You can’t do it.
Because REAL Parmesan makes everything from pizza to pasta to antipasto to pesto BETTER.
We always have a hunk of Parmesan in our fridge. I’ve even caught my son biting a chunk off the wedge!
And let’s face it…sometimes it’s more convenient to have the powdered stuff around. It’s easier to incorporate into homemade pesto or to stir into Alfredo sauce.
The powdered stuff in the green can, however, is NOT the fresh and delicious Parmesan I’m talking about.
That stuff has cellulose powder (a.k.a. wood chips) and potassium sorbate (a preservative) added to keep it from caking together and to make it last on the shelf for, I don’t know, 9 years. Craziness!
What’s a Real Foodie to do?
Make her own, of course!
How To Powder Your Own Parmesan
It literally takes seconds to turn a wedge of Parmesan into a bowl-full of yummy white powder for all your sprinkling needs.
Here’s what you need:
- a wedge of REAL Parmesan — any size
Here’s how to do it:
Cut the wedge of cheese into 1/2″ cubes. You can even include the rind in this — a part that might normally go to waste!
Place the cubes into a high-powered blender or food processor — don’t put more than about 3/4 cup of cubes in at once. You don’t want to overload your expensive equipment! (I have not tried this in a regular blender, so I cannot promise that you won’t break your blender! Proceed with caution!)
Pulse the cheese. It will be VERY loud in a BlendTec or Vitamix. Don’t worry, I’ve done this tons of times and it’s never harmed my precious BlendTec! 🙂
In just a few seconds, it will turn into powdered Parmesan cheese. Store in an airtight container in the fridge as long as you would store a wedge of Parmesan.
There you have it! Wasn’t that so easy!?
