Ingredients
- 3largeeggs
- 3/4cuppumpkin puree
- 1/2cupagave syrup
- 1/4cupunsweetened almond milk
- 1teaspoonvanilla extract
- 3cupsalmond flour
- 2scoopsEarth Echo Collagen Peptides
- 1 1/2teaspoonspumpkin spice powder
- 1teaspoonbaking powder
- 1/2teaspoonbaking soda
- 1/8teaspoonsalt
- 1/4cuppumpkin seeds
Instructions
Preheat the oven to 375° F. Grease or line a standard muffin tin with parchment paper liners.
In a large bowl, beat the eggs until fluffy then add the pumpkin puree, agave syrup, milk, and vanilla. Mix well until fully combined.
Stir in the almond flour, Collagen Peptides, pumpkin spices, baking powder, baking soda, and salt and mix until combined.
Divide the batter evenly between the prepared muffin tins and top with pumpkin seeds.
Bake in a preheated oven for 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Remove the pan from the oven and allow the muffins to cool in the pan for 10 minutes before transferring them to a cooling rack to cool completely.
