Asian Fusion Instant Pot Short Ribs

  1. Press the Saute button on the Instant Pot. Add the lard or other fat and melt. Working in batches of 2 or 3 ribs at a time, sear each rib on both sides -- about 2 minutes per side.
  2. Remove seared short ribs to a plate and set aside.
  3. In a mixing bowl, combine the remaining ingredients and whisk well.
  4. Using the whisk, scrape up the bits of meat and fat from the bottom of the Instant Pot. Then pour in the sauce and mix together.
  5. Place the seared ribs back into the Instant Pot and submerge them as best as you can in the sauce.
  6. Change the setting on the Instant Pot to the Meat/Stew setting, place the lid on, seal the vent, and set the timer to 30 minutes.
  7. When finished, release the pressure and remove the lid.
  8. With tongs, remove the ribs from the pot and set on a platter or large plate.
  9. If you desire to thicken the sauce whisk in arrowroot + water. Otherwise, transfer the sauce to a gravy boat or bowl with a ladle for serving over the ribs.
