Southern Keto Salmon Patties (paleo, nut-free, Whole30, GAPS)

Ingredients

  • 1/2cupdiced yellow onionsauteed
  • 214-ouncecans wild-caught salmonbones removed, if desired
  • 2-4clovesgarlicminced
  • 1/4cupchopped parsleyor cilantro, packed
  • 1lemonjuiced
  • 1/2cupcoconut flour
  • salt and pepperto taste
  • 6tablespoonsnourishing fat for fryingcoconut oil, lard, tallow, avocado oil

Instructions

  1. Saute the onions first and set aside.

  2. Combine the remaining ingredients in a large mixing bowl, including the cooked onions. Mix until it holds together.

  3. Heat 2 tablespoons fat in a cast iron skillet on medium-high heat.

  4. Form patties about the size of your palm and place them in the heated fat.

  5. Reduce heat to medium and cook each side of the salmon patties until browned and crisp.

  6. Transfer to a paper towel-lined plate when cooked and finish frying the remaining patties.

  7. Serve immediately or cool, then store in an airtight container until ready to reheat.
