Keto Instant Pot Caulitatoes (paleo, primal, Whole30)

Ingredients

  • 2poundsfresh cauliflower florets
  • 3/4cupwater
  • 2tablespoonsbutter or gheeor other fat of choice, such as lard for AIP
  • 1 to 2teaspoonssaltmore or less to taste
  • 1 to 2teaspoonsgarlic powdermore or less to taste
  • 1teaspoonblack peppermore or less to taste (omit for AIP)

Instructions

  1. Add the cauliflower florets and water to the stainless steel insert of your Instant Pot.
  2. Place the lid on the pot and seal the vent.
  3. Press the "Manual" button and adjust the time to 2 minutes on high pressure.
  4. When the pot beeps, immediately release the pressure.
  5. Add butter, salt, garlic powder, and pepper to the pot.
  6. Blend with an immersion blender until smooth.
  7. Taste and adjust seasonings, if necessary.
  8. Serve immediately.
  9. Store in the fridge for up to 3 days. Leftovers can be added to a blended soup!
