Instant Pot Cauliflower "Cream" (dairy-free, paleo, Whole30, keto)

Ingredients

  • 16ouncescauliflower floretsfresh or frozen
  • 1/2cupwater

Instructions

  1. Add the cauliflower florets and water to the stainless steel insert of your Instant Pot.
  2. Place the lid on the Instant Pot and seal the vent.
  3. Press the "Manual" button and adjust the time to 2 minutes on high pressure.
  4. When it beeps, immediately release the pressure.
  5. Either transfer the cauliflower and water to a blender (I have this one!) and blend until smooth, or use an immersion blender to blend it right in the pot.
  6. Use right away or store in the fridge for up to 2 days.
