For The Cauliflower "Cream":

  1. Place 1 pound of frozen cauliflower into the stainless steel insert of your Instant Pot. Add 1/2 cup water.
  2. Put the lid on the pot, seal the vent, and press the "Manual" button. Adjust the time to 2 minutes, high pressure. When it beeps, immediately release the pressure.
  3. Blend or puree the cauliflower. And that's cauliflower cream!

For The Best Keto Fudgy Brownies:

  1. Preheat your oven to 350 degrees Fahrenheit, then grease an 8"x8" glass baking dish and line it with unbleached parchment paper.
  2. In a mixing bowl, combine 1 cup of Cauliflower "Cream" and the remaining ingredients.
  3. Mix until a smooth batter forms.
  4. Pour into the prepared baking dish and spread it evenly in the dish.
  5. Bake for 22-25 minutes, or until a toothpick inserted comes out clean.
  6. Remove from the oven and set on a cooling rack.
  7. It's best to wait at least 20 minutes before cutting into these brownies.
  8. Stores for 24 hours at room temperature, or store, covered, in the fridge.
