Clean-Eating Beet & Blood Orange Slaw

Here's a beet and carrot slaw with blood orange juice, fresh ginger, cilantro, sesame seeds, and red pepper flakes. Slightly sweet, spice at the end, crunchy and earthy all the way through, this simple slaw comes together in minutes! And it's perfect for all clean-eating diets, like Paleo and Whole30 (just omit the stevia).

Instructions

  1. Shred the beets and carrots straight into a medium-size serving bowl. I use my Salad Shooter to do this in a few seconds!
  2. Add the remaining ingredients and stir to thoroughly mix.
  3. Taste.
  4. Adjust salt, stevia, vinegar, etc., to your preference.
  5. If you can make this at least an hour in advance, it gives flavors time to develop. If not, it's still yummy and super good the next day!
