Stevia-Sweetened Watermelon-Mint Sorbet

Refreshing summer watermelon and cool mint combine in this completely sugar-free sorbet. With just 5 net carbs per 1/2 cup serving, it supports a stable, happy blood sugar while satisfying those sweet, fruity cravings! Of course, sorbets are made without eggs and dairy, so this treat is super allergy-friendly, too!

Ingredients

  • 5cupswatermeloncubed into large chunks
  • 1cuppacked fresh mint leavestorn from stems
  • 3/4cupwater
  • 2tablespoonslemon juice
  • 2 to 3doonks stevia extract powderto taste

Instructions

  1. Add the cubed watermelon, mint leaves, water, lemon juice, and 1 to 3 doonks (1 "doonk" is 1/32 teaspoon) stevia to a blender. Blend until smooth.
  2. Taste and add more stevia if necessary.
  3. When the mixture tastes perfect to you, pour it through a fine mesh sieve directly into your ice cream maker.

  5. Don't skip the straining step!
  6. Turn on your machine and listen for the machine to slow down, signalling that the mixture has frozen.
  7. Store in the freezer until ready to serve. Remove from the freezer 30 minutes before serving, unless serving immediately.
  8. Garnish with fresh mint!
