To bake the sweet potato, preheat oven to 425° F and line a small baking sheet with parchment paper or foil. Prick sweet potato all over with a fork and place it on the baking sheet. Bake for 45-50 minutes, until tender. When cool enough to handle, slice sweet potato in half and scoop flesh into a medium bowl.
To boil, peel the sweet potato and cut into 1-inch chunks. Place in a medium pot and cover with at least 2 inches of water. Bring to a boil and cook until potatoes are very tender, about 20 to 30 minutes. Drain potatoes and add to a medium bowl.
Add almond milk, cinnamon, flaxseed, and Golden Superfood Bliss to the bowl with the sweet potato. Mash the ingredients together until you’ve reached your desired consistency.
