Dairy-Free Keto Strawberry Ice Cream

Ingredients

Keto Vanilla Ice Cream Base

Strawberry Swirl Sauce

  • 1 1/2cupsfresh or frozen strawberries
  • Juice of 1 lemon
  • 1-2tablespoonsDietz Sweet

Instructions

Ice Cream Base

  1. In a saucepan, heat 1 can of the coconut milk with the Dietz Sweet until the sweetener is dissolved.

  2. To a blender, add the other can of coconut milk, the egg yolks, vanilla extract, and salt. Then, add the coconut milk with dissolved sweetener and blend for 10 to 15 seconds.

  3. Pour this ice cream base into your ice cream machine and churn according to the manufacturer’s instructions.

  4. While the ice cream churns, make the Strawberry Swirl Sauce.

Strawberry Sauce

  1. Add the ingredients to a small saucepan over medium-high heat. As the mixture heats up, use a wooden spoon to break and smash the berries, pounding them down.

  2. Simmer for 20 minutes, stirring occasionally until the sauce reduces and thickens. Set the sauce in the fridge to cool.

  3. This Strawberry Swirl Sauce can be used as a topping for pancakes, waffles, ice cream sundaes, cheesecake, or filling between cake layers!

  4. When the ice cream is almost finished churning (you can tell by the sound of the machine’s motor), slowly drizzle in the cooled strawberry sauce and allow the ice cream machine to continue churning until the mixture is fully incorporated.

  5. Serve immediately or transfer to a dish and set in the freezer to harden up for an hour before serving.
