  • 2 to 3tablespoonscoconut oillard, tallow, or avocado oil
  • 1poundnitrate-freesugar-free ground breakfast sausage
  • 4 to 5cupssweet potatoesabout 2 large peeled and cubed potatoes
  • 1cupdiced onion
  • 1cupdiced sweet peppers
  • 1bunch kaletorn from stems and roughly chopped
  • salt and pepper to taste
  • other spices such as garlic powder or turmericalso to taste (optional)


  1. Melt fat of choice in a large cast iron skillet or cast iron Dutch oven (what I use).
  2. Add the diced sweet potatoes.
  3. To another, smaller skillet, brown the sausage.
  4. While browning the sausage and stirring the sweet potatoes occasionally, dice the onions and peppers.
  5. Once the sausage is browned, remove it from the heat and set aside.
  6. After the potatoes have been cooking for approximately 15 minutes, add the diced onions and peppers to the skillet or Dutch oven.
  7. Stir to combine, add salt, pepper, and other seasonings (if using). Place a lid on the skillet or Dutch oven, then give the hash a stir every few minutes to keep it from sticking.
  8. When the potatoes are soft, add the browned sausage.
  9. Stir it all together, then add the kale last.
  10. The kale only needs about a minute to soften.
  11. Finally, serve!

Recipe Notes

I make this hash in stages, chopping and sauteeing at the same time so it finishes up in less than 30 minutes. It's a pretty great recipe for multi-tasking!
