Vegan Chickpea & Sweet Potato Curry

Ingredients

  • 2tablespoonsolive oil
  • 1medium onion, diced
  • 3cloves garlic, minced
  • 1jalapeno, diced
  • 1canchickpeas (15 ounces)
  • 1large bell pepper, diced
  • 2scoopsGolden Superfood Bliss
  • 1teaspoonpaprika
  • 2teaspoonscurry powder
  • 1teaspoonground cumin
  • 1teaspoonsalt
  • 2cupswater
  • 1cancoconut milk (15 ounces)

Instructions

  1. In a medium pan, heat olive oil over medium heat. Add onions, green chili, garlic cloves and cook, stirring occasionally, until onion turns translucent. 

  2. Add sweet potato, red pepper, chickpeas, Golden Superfood Bliss, paprika, curry powder, ground cumin, salt and water. Stir to combine. Bring to a boil, then reduce to a simmer. Let cook for 10 minutes until the sweet potato is tender.

  3. Stir in coconut milk and cook for another 5 minutes. Remove from heat. Taste and adjust seasoning, as needed. Top with cilantro and serve with naan or rice.
