  1. Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper, unless you prefer to use a baking stone. Do not preheat the baking stone, if using.

  2. Combine all ingredients in a large mixing bowl or the bowl of your stand mixer and mix until combined.

  3. Scoop 2 tablespoons of cookie dough into your hand and form into a ball. Then flatten until about 1/2" thick. Sprinkle a few more pumpkin seeds on top of each cookie for garnish, if you like.

  4. Bake for 19 to 22 minutes.

  5. Cool on the baking sheet for a few minutes before transferring to a wire rack to finish cooling.
