  1. Peel the bananas, cut them in half, and insert a wooden popsicle stick into each banana half.

  2. Lay the bananas on a parchment-lined cookie sheet and transfer to the freezer to harden completely.

  3. Add 1 cup of melted coconut butter to a tall, slender jar. A 1-1/2 pint jar works well.

  4. When the bananas are totally frozen, remove them from the freezer.

  5. Dip each frozen banana into the jar of melted coconut butter, tilting the jar and turning the banana as needed to completely coat it in coconut butter.

  6. Allow excess coconut butter to drip off, then add eyes of choice. Eyes are best added before the coconut butter has had time to freeze to the banana.

  7. Let coconut butter harden, either on the sheet or by transferring back to the freezer after the eyes are applied.

  8. Serve immediately or store in a zip-top bag in the freezer. You may like to let the banana ghosts soften outside the freezer for 5-10 minutes before serving.
