Line a cookie sheet with unbleached parchment paper.
To the bowl of a stand mixer add eggs, sweetener, coconut oil, vanilla, and salt.
Cream these ingredients together until smooth.
Sift in coconut flour and raw cacao powder. Blend again.
Finally, add the chocolate chips and mix, just until combined.
The dough may resemble a thin batter more than cookie dough at this point. That's ok! Leave it for a few minutes and the coconut flour will begin to absorb moisture, considerably thickening the dough.
Dampen your fingers with water and gently press on each dough ball to flatten it to about 1/2" thick. These cookies will not spread on their own in the oven, so if you want flat cookies, you'll have to press them.
Bake 12 to 15 minutes. Remove from the oven immediately transfer to a wire rack to cool.
