  1. Dice the onion and cut the pork roast into 2-inch chunks.

  2. Press the Saute button on your Instant Pot and add fat of choice. Add the onion and chunks of pork roast and saute for 3-4 minutes, stirring occasionally.

  3. Press the Keep Warm/Cancel button.

  4. Add the remaining ingredients, except the arrowroot slurry.

  5. Press the "Pressure Cook" or "Manual" button and adjust the time to 60 minutes on high pressure. Check that the seal is in place, put the lid on the pot, and close the vent.

  6. When it beeps, immediately release the pressure.

  7. Carefully remove the chunks of pork roast from the Instant Pot and shred.

  8. Press the Saute button again and stir in the arrowroot slurry to thicken the green chile sauce.

  9. Add the shredded pork back to the pot and toss in the sauce to coat.
